This is from someone who loves cooking and cooking tools. I bought this knife after reading lots and lots of reviews of similar items. It is such a good value and a handy addition to any kitchen. I dice or chop with its thin and very sharp blade then scoop up the food using the broad blade as I would a bench scraper. I don't use it as a cleaver; I have a heavier knife with a coarser blade that does the rough service stuff. I haven't seen the Chinese Chef Knife in the stores I shop that carry Dexter knives so I am happy that it is available through Amazon.
