I was a little leary about spending $60 for a single knife, however I have become quite a chef at home and the knives I purchased for under $20 always became dull after just a few uses. I bought this knife a couple of months ago (although not from Amazon) and was impressed. It is short and light and is best suited for chopping, but can also slice and dice fruits, smaller vegetables and herbs. Like all Santoku knives I find that it's really not good at mincing because it lacks the easy rocking motion of knives with bellies (the curved blade on traditional German style chef knives). I also found it difficult to work with on sweet potatoes and other larger vegetables because it is so light and small. I have tried it on meat and it did the job of slicing alright, but I prefer something bigger and sturdier when working with a piece of meat.

This is a home cook knife, suitable for certain tasks. It feels like a razor in your hands and the handle is light and small. It would be ideal for someone who has small hands, works mostly with vegetarian dishes, and small portions.

That being said, it is surprisingly sturdy. I have used a no name honing steel on it and that seems to do the job of realigning the blade all right. It has remained sharp, and not needed stoning, although I've used it almost daily for about four months. I do a lot of cooking with my relatives and this is the knife they all reach for when we cook together.

It is a German knife with a soft steel, compared to most Japanese knives, but in my experience has great edge retention....so far.

I've had this knife for a number of years and it has been my go-to all-time favorite. It's just the right size for my hand (small) and it feels good to hold. Nice and sharp too! Love it!
