Very sharp, even cuts through a melon with ease, cleans up well. The cover over the blade is wonderful. I have also purchased the "picnic" size knife. I will be tossing out all my other knives. These knives are lightweight and very functional. The colors are outstanding. I think the knives are very functional and used by a professional chef I know in his home. They are the best knives for the money you can buy.I have a Global Santoku which I love and use on almost everything. When I saw this smaller Santoku knife I thought that for $10 it might be worth trying and if I didn't like it I was only out $10. Well I guess I'm just too spoiled using the Global. It is the sharpest knife I have ever used and when you've had a really sharp knife there is just no going back. The Silvermark was not very sharp right out of the package so I tried sharpening it with my Chef's Choice manual Asian knife sharpener. I was able to improve the knife but it still didn't come close to my Global. Granted the Global cost quite a bit more so it is not a fair comparison. However I have found that I like to use the Silvermark as a steak knife so it wasn't a total loss.This knife is fantastic and you can't beat the price. I use it all the time, now, for my smaller jobs. It cuts just as good as my larger, more expensive one. Glad I bought it.
