I have had a slicer similar to this one for over 25 years and have taped it and taped it!I thought this one might be close, but helas, it's not! When pulling back on a softer cheese like Gouda, it curls it and then the next slice goes the same and worse!!!!This is ok. on a cheese like Jarlsberg (harder), but just does not cut it (pun intended!) like my oldie w/ the wooden handle!!! I'll keep looking!!!
If anyone out there knows of a good slicer, let me know, because I buy a lot of cheese in bulk and prefer freshly sliced for any use!This tool does what it is supposed to do: it cuts hard cheese into consistently thin slices. I bought it side by side with the Amazon's prettier "Sagaform Stainless Steel Cheese Slicer with Oak Handle". The second, although prettier, did not cut Jarlsberg cheese. Rather, its excessively flexible cutting gap just collapsed under normal hand pressure, leading the cutter to scrap along the top of the cheese. Stick with this better-made and better-designed Taiwan knockoff.
