Messermeister Meridian Elite 6-Inch Stiff Boning Knife

I've wanted this knife for several years and finally bought it. I can't tell you how glad I am that I did. It's razor sharp out of the box, sharpens quite easily and keeps it's edge much longer than any boning knife I've previously owned. I use to sharpen my boning knife daily and now I can go nearly a full work week between sharpening. I'm using this to do butchery of whole hogs, rabbits, and guinea fowl in a buys Manhattan restaurant. The handle shape is great, fits well in the hand and doesn't fatigue like blockier style handles do. I own several Messermeister knives, they're the only ones that come out of my knife bag regularly and probably the only brand I'll ever buy again. Aside from the great quality of the knives is the price. Not cheap but I don't worry about using my best knives in the kitchen because I could afford to replace them if something happened to them.
