I love this knife. However, my son the chef says that the end of the blade, where it gets thick where it meets the handle, is annoying because then you have to always watch that and you loose that section of the knife for cutting. I still love this knife.
The good news is that my son loves the Mercer 7" Santoku knife that I got in the 4 piece starter set that I bought at the same time. He uses the 7" Santoku for everything when he cooks in my house. He says that is a good knife for me but for him he would prefer a bit more length. So at least he likes one of the knew...uh...new knives I bought.
I am happy with the Mercer knives. They are great in general, and especially for that price.When I first started culinary school, my kit included a 12 inch chefs knife. It worked fine, but I wanted a smaller knife for chopping. This is the perfect knife for that. It is just big enough without being so large that your fingers get in the way.
