Cuisinart Green Gourmet 3-1/2-Inch Santoku Knife

Cuisinart Green Gourmet 3-1/2-Inch Santoku KnifeI discovered the feel and versatility of a Santoku knife some years back. I came across one in my kitchen from who knows where that I started to really taking a liking to. The Santoku design for me personally makes for an excellent edge for any kind of cutting, and dicing as well. And I much prefer it for small cutting jobs over the more familiar shaped paring knife. The only problem I found was locating a knife in a Santoku that was small enough to be compared to a regular paring knife. There are some 4 and a half inch Santokus around, lots of 5 inch, and 6 and 7 inch are also abundant. But one smaller than a 4 inch I could only find in this Cuisnart model. Fortunately its turned out to be a good choice. The blade on this knife is a of a decent thickness and quality stainless steel that it feels and sharpens very well. It is neither cheap nor flimsy in any way. The handle on this knife is not green colored as the name may suggest, but green in that it uses 70% less fossil fuel in its production. I have never paid much attention to what a handle is made of, but how comfortable it feels. This polymer is nice and thick and has a nice quality feel to it. I find it very comfortable to use and well designed. In conclusion, not everyone is going to enjoy, or find useful the higher Santoku design in a knife for the small jobs it is designed for. I have seen other reviews where some people have found the Santoku a little awkward for small jobs. In all fairness, this Santoku just barely makes the cut in its design. Meaning its thinner or lower in the blade than your average Santoku, but higher than a regular paring knife. It may not be for every cook out there as a first choice, but personally I much prefer it. And I highly recommend this knife if you happen to feel the same way. As far as I can find, this is the smallest knife on Amazon that calls itself a Santoku....
