JAPANESE SEKIRYU DEBA CHEF KNIFEThis knife is a little light weight compared to other deba knives I've used but super sharp. I am a professional chef and I use this knife everyday great little utility knife. Slices great stays sharp for days on a quick hone. Plastic piece at hilt slipped but its an easy fix. And handle is totally untreated wood but a little oil from time to time takes care of that. For the price it unbeatable.

This is a reasonably priced deba.

The ootb sharpness is about par with some Wusthof and Henckels products.Nothing special compared to higher price point japanese knives.

The fit and finish are ok but nothing special here either.

Nice balance though.

I put a razors edge on the one I purchased.

I haven't really done a lot of cutting with it so I can't comment on the edge retention. But it sharpened easily so it doesn't appear to be super hardened.It can be used as a cleaver so that's not a bad thing..

After staining the handle. And polishing the blade.Both easily accomplished. It's not a bad looking knife either.

Appears to be worth the money if you're not ready to shell out a hundred bucks or more to see it a deba is a knife you'll like and use.

Once you see what this cheap one will do you might decide a deba is a knife you want and upgrade.Instead of spending $50-150 and finding out you don't appreciate it.

If you're just looking for a cheap handy knive that can be sharpened to a razor edge

this isn't a bad choice.

I ordered several Japanese knives as a gift in December and upon seeing them decided to get the same Deba and Nakiri for myself. I needed to pay the postman $.51 postage due...not a good start.

The knives were very different from the first set. They have a cast pattern that I guess is supposed to look like Damascus steel...not unattractive, just not what I had previously received. The kanji inscription was not carved into the steel but on an adhesive label. They also have an intentional unpolished area on the blades...perhaps a non-stick element?

So appearance-wise, not what I ordered.

Extremely sharp, well balanced and comfortable to use. My first Deba use was on a stick of very hard salami...effortless and paper thin slices..so I decided to see what it would do on a very sharp aged provolone (the type that almost crumbles)..again paper thin and surprisingly no sticking to the blade. Same great results with the Nakiri on vegetables. Mincing garlic super small, ginger threads and general vegetable slicing/chopping...top notch.

So Functionality...a great knife for the price.
