Ginsu Essential Open Stock Series Japanese 420J2 Stainless Steel 2-Piece Santoku Set with 5 and 7-InchSantoku Blades 4861I am a semi-pro chef. I have owned other ginsu knives and have been happy with some. My favorite one is a serrated knive (original Ginsu) that I use to cut open cans, saw through frozen sausage logs, and still cuts fresh homemade bread. That one I think I paid around 6 bucks for it 9 years ago. These new ones, the 4861 set, are disappointing to me. They didn't stay sharp enough to slice tomatoes and I only use them very occasionally and gently (no cans). I bought them around November, 2011. For me, sharpness is everything in a knife, especially this type with a 'Permanent edge'. I would not recommend this set.

I have a collection of good knives already but I wanted to get some spares. These are not as sturdy as what I'm use to but they are good enough for everyday cutting. For the price they are well worth it. I would recommend them to any one who wants some extra everyday knives.

Great knives and match my already existing steak knives. These are extremely sharp and have a good grip on them. Wash up nicely--by hand or in the dishwasher. I haven't found anything these knives can't cut through! They chop well and slice with ease. Great purchase (my husband was using a box-cutter because my other knives were so dull and poor) he loves these!

I bought these on a whim. They are not expensive looking but are comfortable to use and amazingly sharp. If you need a couple of additional knives, they're the way to go. The smaller one is kind of a unique size and very useful.

We've used Ginsu for years. Well balanced and incredibly sharp, they last forever. Just don't put them in the dishwasher. I've never understood why anyone spends more money on knives.
