A good oyster knife needs to be...
sharp and strong enough to dig into the oyster,
narrow and graceful enough not to break up the shell or flake debris into the inside of the oyster,
and short enough to not end up damaging the meat of the oyster while opening.
This knife fits all of these qualities and has been serving me well. I plan on buying more for guests, and getting rid of my other kinds of oyster knives.After struggeling to open oysters without an oyster knife I purhased this one. I looked at all the reviews and decided that simple was better. The blade is sturdy enough that it does not bend at all when prying. The tip and blade are sharp enough to make quick work of the oyster's foot. The work hand remains a good grip even when wet. I have seen the same knife in restaurants and seafood bars. You can spend more but do not need to. I usually get 4 dozen oysters which take about 10 minutes to open. Certainly not as fast as a professional but what's the hurry?
I usae a kevlar glove on my other hand to hold the oyster. The protects as much from the oyster's sharp edage as well as an errant slip of the knife (Hasn't happend yet).

After stabbing myself with a screwdriver while trying to pry open oysters that I bought on a whim (don't judge) I decided that a oyster knife was in my future I really enjoy the wood grip, and find it to be much more useful (and less slippery) than a similar plastic grip. The knife blade is solid, and opens oysters every time without problems. I'm not sure if you're supposed to put this in the dishwasher or not, since it's made of wood, but I do, and it does just fine.Overall: Great value and great product -
