Wenger Swibo Butcher Knife, Curved Rigid Blade

I have a whole set of these. They are the best knives i have owned in my 12 years of experience as a professorial butcher. Love the handles, and the they are working sharp right out of the wrapper. That may sound funny to a lot of people, but it is really rare in my experience. I usually sharpen all my new knives to give them an edge like.

Receently ordered this knife and the 6 1/4 boning knife. Shipped on time and had for the yearly cow slaughter. Like the title says they are really sharp out of the package and it held its edge well. Anyone who has ever cleaned a dear or cow knows thje fur is hard on a knife. This knife stayed sharp for the whole job and probably keep going for another animal. only complaint is the cheap plastic sheath it came in but I didn't purchase it for the sheath.

My 1st Swibo lasted over 30 years, broke it while using it for a pry bar to split frozen pork butts apart, I cried. This new one is not as heavy/thick as the original but if used for the intended purpose and not a pry bar it should be fine. However after touching it up with my Ceramic stone I discovered it may be too sharp for most people to use after a beer or 2 (4). This discovery was made while steaking out a full Rib Loin into Rib Eye steaks. It easily, without any resistence or pain, cleanly removed about .060" off the tip of my driving finger....it should heal in another week or two and I should be able to get back out into traffic with my signal finger intact.

Should have a warning label: If any digit is accidently severed, pack loose part(s) in ice and visit your local Emergency Room for reconnection ASAP.
