A TAD THINNER AND MORE "BENDY" THEN I THOUGHT OR HOPED IT WOULD BE. THINNER BLADE THEN IM USED TO OR EXPECTED.I bought this knife specifically to break down ribeye's and large whole fish like grouper and rock fish. It's perfect out of the box, as the factory edge is shallow, but sharp. And the moulded handle means its safe for commercial dishwashers...no rivets to worry about.
After 100's of pounds of ribeye's, I have yet to sharpen it beyond my diamond hone.
As a 21 year vet of cooking, I highly recommend this knife, and the majority of mundial knives for that matter. Price, quality, feel, and a lifetime guarantee suits me just fine.
The other day, my line cook snapped the tip off of his $100+ Japanese chef knife, and I told him that if I was to do the same with my $30 mundial, all I'd have to do was send it in, and I'd get a new one...to each their own.
