Misono Swedish Carbon Steel Gyutou 8.2' - RightThis knife has a Hardness Rockwell C Scale 60 rating. The knife is not stainless because it is so hard and carbon steel. This is not for the casual user. You have to take care of this knife and clean the knife after cuts (to avoid rust; in 5-10min). Acids (lemons, ect.) are particularily harsh to carbon steel. Wipe with clean towel and rub with vegetable oil or Tsubaki knife oil after use.

Great purchase for me. Though I also have worse knives for other projects when I am not in full chef mode.

The picture on the web clearly shows there is a dragon engraved on the knife blade. Unfortunately I received a knife with no dragon. Nowhere on the Amazon site does it indicate that the 8.2" knife is not engraved but further searching on the web reveiled a small obscure statement that the dragon engraving is not available on this size knife or the 9.2" knife. Very disappointing.
