I used to buy expensive knives, Wusthof , etc. None of them lasted that well. RENNAISSANCE by Mercer is the best knife for your money. I have their largest Chef knife and this knife. From a minimalist perspective, that is all you will need. I have hidden these 2 knives in and amongst my older set of Wusthof , Henckels, etc. That way, the family doesn't throw them in the dishwasher. This is the best knife for your money. Don't hesitate. Do not put in dishwasher. Hand rinse and dry and put away.
