Wusthof Gourmet 7-Inch Fish Fillet Knife with Leather Sheath

Customer review from the Amazon Vine Program I have three fishing/filet knives including this one. They are a Cutco (yes, the brand that you are besieged by when your friend's kids want to get their first sales job), Gerber ("Coho" model from years ago) and now the Wusthof in this review. I actually fish a lot as well as prepare fish from the market. With that said, the Wusthof is good but not great as an overall deal. Here are the positives:

1. The blade is long, thin and can be sharpened.

2. The stainless steel alloy used is hard enough for service able use.

3. I was able to do filet work on a salmon with relative ease.

4. Nice construction details (handle with through tang, etc.)

However, it did not come fully sharpened and needed some work before use. The sheath is leather. LEATHER. It's supposed to get wet.

Customer review from the Amazon Vine Program This knife is exactly what you might expect. It's a pretty nice piece of German steel that's sharpened to a reasonable edge. the handle end is reasonable weighted, with a balance point about three inches up the five inch bakelite handle. There's a pretty pronounced finger guard which doesn't quite keep your fingers from getting a little sticky, but does make it hard to cut yourself.

The blade has about an inch of flex over its 7 inch length. There are no serrations (which is good once you get past the scales). The edge isn't as nice as some of my favorite Japanese knives, but it should be fine for a few fish. Finally, the tough leather scabbard has a belt-loop that works well on one side. The knife usually slides in just fine, but doesn't feel completely secure when it's in and there's no lock/safety feature.

It's a bit pricey for a camping knife and a bit big for my purposes, but this is a pretty reasonable mid-tier knife.

I am using the knife in the kitchen and so far it is sharp, but we shall see how long it maintains the sharpness.

I feel the handle is cheap and I am concerned it may break especially if used by a man who might not be as careful.

I will be back as the summer progresses for an update. At this time based on price and the handle I can only give it a 3 1/2

I upped the rating. The knife has been used for everything from kitchen duty to dressing meat killed in the hunt (not by me). It has taken quite a beating in my opinion and has withstood everything. Can't ask for more than that.
