I first saw a knife like this one on a Wüsthof video, so for fun and curiosity, I gave this knife a try. It takes a little getting used to with its offset handle, but it's not a big deal unless you plan on mass producing wavy cuts. And for that, you'd probably need something else, anyway. If you don't chop straight down, it will let you know by nearly stopping the cut. I don't know if it's my knife or just a property of this kind of knife, but it helps to lift the item you're cutting a little bit to help the knife complete the cut. It would take a lot of practice to attain any kind of speed with this knife. But shouldn't you take your time when decorating? It works great on cucumbers, radishes, carrots, etc. in salads, and the resulting pieces pick up lots more dressing.
