I usually refrain from reviewing anything until I've had the product for a few months. Since I bought the 10 inch french knife a while back I already know the quality level of this company. I just took it for a test drive and deboned a rabbit. It was like cutting through butter. This knife also has a surprising level of flexibility for a damascus blade. Puts my old german steel boning knife to shame.
