I promised myself that I would research and buy only knives that were the best replacements I could afford for the old knives in my kitchen! This one,my CIA, is the best I have used of its type! It's sharp, holds its great edge and makes short work of peeling and small cutting duties! I am a lefty, and the handle and blade work wonderfully well for me! This is my latest cutlery addition, I recently purchased the 8" chef's knife from CIA (as well as their 'Professional Chef' book), and this cutie completes my kit nicely. I also bought the 'Calphalon Fruit and Vegetable' combo of 3.5" paring and 6" Utility for my wife so she would have her own knives. Those handles are great, but they don't keep their edges quite as well as the high quality steel of the CIA Hyde Park Master's Collection blades. A 3.5" parer is the ideal size for it's function, I tried the 6" utility and I would tend to agree with those who argue that it's 'in-between' size makes it somewhat disadvantageous. If you have a limited budget as a home-cook like I do, buy a good 8" chef and a 3-4" parer and you're good to go. The CIA Masters' seem to be a really good line for their price and I highly recommend them.
