The right tool for the job. Great German single piece forged boning knife that will be a staple in my collection for years to come. Will buy another when this one gets sharpened to the handle.

It is as advertised, a high end, very well made knife. It will last you forever if you give it just a little TLC (i.e. keep out of the dishwasher, keep it sharp, and store it properly not clanking against a dozen other knives in a drawer). It isn't cheap, but it is a worth the money.

for pro. use,you just need to keep sharpening it often while using it, i use most of the brands between japanese and germany made, better hand feel handle on most japanese pieces,other than that , you just have to keep your sharpen steel next to you like always in the pro.kitchen
