Mundial 3311-12 12-Inch Sharpening Steel, BlackI have a number of good knives, which I always took to be professionally sharpened once or twice a year. After I moved, I could not find a reliable knife sharpening business, so I just used the honing steel with a rounded end that I bought many years ago. It wasn't great, but it was the best I could find. A chef friend of mine recommended this sharpening steel and I decided to give it a try. It works great. I used it on all of my knives when it first arrived and now I use it after each use of the knife and my knives are all cutting well again. Unfortunately, it is a honing steel, not really a sharpening steel, but it did a much better job than my old one so I'm pleased with its performance. For those of you who aren't aware of the difference, honing just brings the edges back into alignment, and doesn't truly "sharpen." With use, a knife blade will go slightly "off" on the very edge of the blade, making it dull. A professional sharpener will put knives to a machine and actually re-edge, while a honing steel just straightens the edges to give a truer cut. The end of this Mundial sharpening steel has a flat surface to hone the knives across and it is much easier to use and works across the entire blade as you run the knife across it. I'm still looking for a place to take my knives to be sharpened professionally, but meanwhile, this steel keeps the edges in great shape. Well worth the money for anyone who has good knives and wants to keep them performing well.

First off, this is for maintaining an edge, not creating one. Regular use of a knife dulls its fine edge and for a bit you can restore it, hone it, with sharpening steel, ultimately, you'll have to reshape and resharpen your blade. For starters, get a 12" not a 10" sharpening steel; 10" is too short for larger knives. I prefer diamond over steel as it lasts much longer. That said, you want diamond that stays on the steel (doesn't flake off) and that is fine, not coarse; this does both (coarse will do more than just hone the edge). I prefer the poly shape over the round (not sure which one is being sold here). I have had this product for years now and am glad I spent the extra money. Prior to chopping or cutting, I give my knife a few swipes and I'm good to go!

This sharpening steel is a great value for the money. A friend bought us a Mundial chef knife for Christmas last year and I was amazed at how great the knife is. This steel is no exception, it's very well made. I plan to eventually have a complete set of Mundial knives, they are just as good as any of the well known names and are fairly inexpensive.
