Dexter-Russell V-LO 3.5-Inch Carbon Steel Parer

I bought this knife for its carbon steel blade, which should retain its sharpness better than stainless steel knives. The knife arrived with a very sharp blade; its handle is a comfortable shape. However, the knife is very light in weight, which makes it feel unsubstantial. I admit that, because it's a paring knife, functionally it probably doesn't need to be heavier. Still, I'd perceive the Dexter-Russell as a higher quality tool if it had more heft.

In fairness I should include also my wife's opinion: "I love the knife--it's so sharp." She notices the light weight, but it doesn't bother her.

Rogers 40-Piece Rose Elegance Flatware

This posting follows my earlier review of a different 18/0 flatware set. I found the Rose Elegance pattern quite detailed (more so than is revealed by the photo posted with this listing) and attractive, although there were trade-offs made to achieve the relatively low price point, see below.

The most common specification for stainless steel flatware is 18/10. The 18 refers to the chromium content and the 10 to the nickel content. Although not listed in the "technical details" at the time of this review, Rogers Co. Rose Elegance sets are manufactured using 18/0 stainless steel to keep costs down. However, 18/0 stainless steel has 0% nickel content, and consequently is less resistant to pitting and corrosion.

18/0 stainless steel is known as ferritic steel as it, like pure iron, is magnetically attracted (a quick test for less expensive stainless). This is opposed to 18/10, which is called austenitic stainless steel and is not, or only weakly, magnetically attracted. For practical purposes chromium/nickel, 18/10 and 18/8, steels are essentially identical. Because of its superior properties, over 2/3rds of all stainless steel produced is austenitic.

The greater the nickel composition the better the protection against pitting and corrosion, but the higher the cost. This is one of the reasons prices for flatware vary so significantly. Also note that 18/0 flatware is often finished to a lower standard than higher nickel content stainless steel to further reduce manufacturing costs. Even on a quite cursory examination, my 18/0 flatware does not look quite as good as my higher quality stainless steel flatware. However, unless you need that extra increment of appearance obtained with 18/10 stainless, this set will serve well for every day use.

This flatware is almost identical to the one I have (made by someone else, couldn't find the pattern anymore). The pieces have a good weight to them not too heavy, not too light, and look great.

I bought this mini Santoku just recently for I wanted a knife in this design that was a little smaller than the 5 inch or better average. At around $8.00 I wasn't expecting much for sure. And that's just what I got. Don't even consider this for a kitchen knife. Though the handle is nice and thick and very comfortable, the blade is as thin and cheap as they come. You can bend it easily with your fingers, and it will disintegrate quickly with any sharpening. It's ok as a utility knife for your drawer or back yard shed, (which is where my ended up), but that's about all. A plastic sheath is included so you can tuck it away somewhere as a handy knife without worry of slicing yourself with it when fishing it out. Not bad at all for small miscellaneous jobs, but as a kitchen utensil, its a big fat NO......

Shun Steel 9-Inch Slicing Knife

If you are shopping for a Shun, I assume you are already familiar with their reputation for razor-sharp edges, so I will address this knife itself.

This slicing knife is a great addition to your set. I recently used it to carve up some beef roasts and I was able to carve paper-thin slices. I didn't experience too much sticking either, this may be due to the Damascus-style pattern that creates micro air-pockets. Therefore, I think this version without the scallops will do just fine.

The knife has a good length that's great for most roasts, a tip that makes it easy to maneuver and a sturdy construction that feels balanced and comfortable. The handle is sturdy and has a slight matte finish that keeps it from being too slippery.

On another note, I have seen this knife advertised on Amazon for about $60 (which is the price I bought it for). It was first listed at $110, then went down to $60, and now as of writing this review it is back up to $110. I am not sure if it's a supplier issue, but you should constantly monitor the prices of the Shuns sold on Amazon due to these fluctuations. In any event, I still think this knife is worth $110 and I believe you will like this knife as much as I have.

Perhaps not as good looking as the paka wood classic version, this knife is nevertheless a superb slicer -just what you'd expect from the first rate Shun knife manufacturers.

It was the best $62 I ever spent. If you are cutting meat with bones in it, get the boning knife. This knife is great for boneless meat and raw fish.

Zwilling J.A. Henckels Twin Pro S 8-Inch High Carbon Stainless-Steel Bread Knife

I may use my Chef's knife everyday, but I use this knife every other day--more often than one would think. This isn't just a bread knife, but a heavy-duty serious serrated utility knife, the best thing to cut super-thin tomato slices or anything with a skin, like sausage.

The triple rivet handles are classic and the construction is neigh-on flawless--I look forward to having my children (currently not even a gleam in my eye) inherit these in the same condition they're in now.

After purchasing three other Henckels Pro S Knives (non-serrated) and being satisfied with the quality, we purchased this bread knife assuming the expense would be worth it. BUYER BEWARE. We only used this knife on bread and pastry, always used a cutting board and hand washed it. But after only a couple months use, the serrations not only bent out of shape, but very small fissures, almost like cracks, appeared in the blade. The blade was so jagged the dishcloth would hook on the blade and it was putting little holes in my dishtowels. I packaged it back up in the original packaging and sent it to the Henckels customer relations department, assuming that this reputable company would stand behind the product. But five weeks later I received my knife in the mail with a message that simply said the knife needed professional sharpening. PLUS, they had thrown away the original packaging I had saved specifically in case I ever needed to send the knife in and make use of the warranty, and instead they sent the knife back to me in a cheap disposable plastic sleeve. The fissures in the blade were too deep for sharpening to get out without completely grinding it away. So I tried calling the Customer Relations department THREE times. All times I had to leave messages that were never returned. And beware, it is difficult to find a sharpening service that will sharpen a serrated knife. I could only find places I would have to mail it out to again that said they would try it. I finally took it to my local butcher shop who said they would try to sharpen it but couldn't guarantee I'd be happy with the finished product as the blade was in such beat up condition. By the time they filed out most of the nicks and cracks the tips of the serrations had been filed almost completely away. I was furious that the company hadn't stood behind this expensive knife, as faulty craftsmanship is the only explanation for the condition the knife was in after such a short amount of time. I will never purchase another Henckels knife again simply because the customer service was so terrible and it seems so unfair that I am stuck with this piece of junk knife. Complete waste of of money.

When I was washing the knife I noticed that the fine edge on the serrations had bent over to the non-scalloped side of the blade. I guess i found this a little irritating since i spent a fortune on this knife. It cuts bread fine, but i would not purchase again if i had the choice.

Zyliss Knife Sharpener

It's great for getting that extra fine edge to the Zyliss blade, but it doesn't hone and sharpen like other knife sharpeners. The two wheels inside are, I believe, porcelain, and works well with the Zyliss knives because of their thin blades. Still a good product for the price.

The Sharpener takes very little space in a drawer and sharpens knives quickly. I haven't used it for long enough to know whether it will loose its sharpening power after a time. For now, I'm happy with it.

Oneida Harmonic 6-Piece Serving Set

The Harmonic style Oneida Hostess set is really beautiful. The little teardrop punch out at the base of each item (except the knife because it is such a thick base) really adds to the simple and elegant style. I am getting married in May 2012 and this style is feminine enough for me, but not too girly for my future husband. Great price as well! I will use this for casual and formal dinning. (I am paring this with Mikasa's Antique White plates.) I have not used the item yet, but I got Onieida because my mother has had her set for over 20 years and they have lasted very well. I researched steak knives for about a month. Hard to believe that I settled on a brand that has been around since I was a kid. I still remember the commercials for the Ginsu knife that cut a brick in half then sliced a tomato clean without tearing. Not knowing much about steak knives, I read every review on pretty much every brand out there. I wanted a touch of elegance, a well made and well balanced tool, a superior cutting blade and a storage box so they dont get heaped into my run of the mill knives. This set filled the bill and did not break the bank! The Damascus steel is time tested and tough to beat for this price. And the icing on the cake is the guarantee that is carried with these knives along with a Ginsu promise to sharpen these babies for a small fee. I cant loose.... They slice meat like I expected. I will definately be looking into their kitchen/ chef knife set.

Ginsu ... a name associated with infomercials? Not so with these 17 layer Damascus steel knives. The steel is grade A. These come as sharp as razors and are easily maintained at the performance with knowledgeable sharpening. The handle design is a plastic and that's the only negative (however, they stand-up to the dishwasher better than woods)

The Shun variety of beautiful Damascus and wood handles would have been my first choice, but they are too dang expensive for routine steak knives.

I waited a little while before reviewing these to see how they'd hold up after a bunch of times through the dishwasher. They've been washed quite a bit and still look brand new! They have a nice feel to them and they aren't to heavy or bulky. The knives have a little bit of a sharp point to them that can be a little tricky if your spreading jam and peanut butter but once you get used to it it's not a problem. These will last a long time and stay shiny due to be 18/10.

Cuisinart 8 Piece Ceramic Kitchen Prep Set with Cutting Board

I received this set last Christmas from my husband. The price is outstanding for the number of knives and the cutting board is a nice plus. Now it's April, so for three months these have been my go to knives. Outstanding. I can slice very thin and the cutting board is really nice to have. Peeler is great too. Jamie Oliver Knife Block, 6-Piece Set

I had previously purchased a very well known brand of knives from a major department store via the internet. Upon inspection, it was apparent that the knives were of inferior quality and were promptly returned.

To determine what to look for in a quality knife, I went to a store that carried knives and studied what an expensive set (which I could not afford) offered. The better knives had a "chunky bolster" which protected the hand and gave it more weight. There were also other considerations such as "full tang." I had also seen sets that had knives that I would never use and were missing a bread knife that I always use.

The Jamie Oliver Knife Block Set (purchase the sharpening steel also) has the knives that you will constantly utilize. They have wonderful balance and are quite "weighty" which results in less pressure needed for chopping or cutting. They cut easily and the handles are extremely comfortable. The set is aesthetically beautiful.

I am amazed that this set can be offered at such a wonderful price point.

Product seemed nice at first. Had to get around the fact that I couldn't set them near my stove since the block is too high. Started noticing a few rust spots then last week I was in a hurry so left a rinsed knife in the dishwasher to drain (did not run the dishwasher but closed it). The side up is completely rusted where the water was! Glad I didn't throw away my 30 year old Sears set. Never had a problem with them I'll go get them sharpened.

Good set of knives for the price. I don't love the star trek like design cut in to the wood so I tried to turn the block around...the unfortunate part is that the knives go in only at one angle, making it too awkward to take them out when the block is turned around.
