Chicago Cutlery Essentials 7-Inch Santoku KnifeI purchased this knife to replace my Chicago Cutlery Insignia Santoku knife. This knife is definitely cheaper in cost and feels cheaper as well. The quality of the blade in medium to low end. It didn't feel near as sturdy and sharp as my Insignia Santoku knife. I sharpened it and it still didn't achieve the same rigidity. It get what you pay for, and this is an example. Chicago Cutlery makes nice cutlery, this isn't an example. Spend a little more on the Insignia series.

I cook a lot and own several Chicago Cutlery knives (I especially LOVE my CC Walnut Tradition steak knives), so I turned to them for an alternate Santoku that would be easier and quicker to sharpen than my Wusthof. It is a bit heavier, but still comfortable. I would have liked to have the blade a little narrower and lighter because that is what I'm used to, but it's inexpensive enough that I'm not afraid to use a simple sharpener every time I use it. Also, the scallops of the Granton edge begin further from the cutting edge, so there is more drag while cutting than I get from the Wusthof. All in all, it's a good knife not a great knife but for the price I'm pleased with it.

This is a quality knife! I love using it and it has made my life so much easier! I've seen knives like this on cooking shows and I've wanted one but kept putting it off for some reason. I'm single and I prepare all my own meals. This knife is exactly what I needed. I can't believe I managed for so long with using regular steak knives or bread knives while cooking!

This knife is in the middle of the road. We have another that we have used for 5 years and it was great. My husband complained that the handle was too thin. I used it and it does not cut like its the one we originally brought. It did OK, not great, not bad, just OK.
