The Wusthof "Grand Prix II" Boning Knife, 5" works well for boning, and cutting meats and vegetables. It is an all-purpose kitchen knife. It has an excellent feel and is quite sharp.I bought a block set of Grand Prix II knives, but it didn't include a boning knife. This is such a useful and great knife; I'm not sure why it isn't included as a standard knife in a block set (instead of getting 3 utility knives exactly alike except different sizes).
Anyway, I have it now and love it.
