These knives are a very good choice for the first knife that a meat cutter will pick. The overall length offers good control. The weight is light enough to be used comfortable for a long day without fatigue to your hand. The large handle again is something suitable for all day work. The factory cutting edge is an exceptionable quality, that may use a personal touch. Flexibility is just a bit stiff for my taste but overall this a work horse.
