Zwilling J. A. Henckels Miyabi 5000S Gyutoh 8' Chef's KnifeI originally wanted to buy the Morimoto edition, since... he's one of my favorite chefs and I am a frequent patron of his restaurants, mainly in Napa, CA. What does this have anything to do with anything? The man is AWESOME as a chef so he must know what he is doing. Have you seen him cut a fish? However, I did not buy the Morimoto edition since I like the look of the blunt end. It's more of a contemporary look design and I like that.

I read a review about these knives and they did mention, "the only knife you will reach for", and it is true. Ever since I purchased this knife, it truly is the only knife I reach for. it is SUPER sharp, right out of the box. Everyone does the paper-cut test when they buy a new knife, yes? Usually this is done with the blade angled at roughly 45 degrees upwards and pulled towards you slightly. My paper cut test with this knife was NEARLY straight down and I went down the entire with of the sheet. This is the sharpest knife I own! It cuts EVERYTHING like hot through butter.

The weight of this knife is also incredible. It is very well balanced and light. I typically like heavier knives, but the balance of this knife makes it a dream to handle.

I bought this knife along with two other of this series for a gift. The cook in our family loves them!
