On one hand, there are many fillet knives available for less money, However, the quality of this knife, is well worth it. Quality steel makes a world of difference. No more sawing to get through the scales, the blade is sensitive enough to literally feel the rib cage as you fillet. It parts the meat from the bone like a light saber...this makes filleting a fish a much more enjoyable, quick process. Do it right, and you'll only do it once. Go cheap, you will end up buying several until you get this knife.

A fine knife for a specialized purpose. The blade may be a bit longer than some users want or need but for larger pieces of fish or meat I find it perfect. The thin blade makes it slide effortlessly under silverskin or through smoked salmon. The blade is quite sharp and easy to maintain. The handle is well made, the curve of the blade is efficient, and the balance is good.

I have to wonder why this knife is delivered with a sheath as it is hard for me to imagine anglers paying this much for a knife to knock around in the boat. Wusthof might be smarter to offer the sheath as an accessory.

The quality of this knife is top-notch but it's functionality as a fishing knife is limited. It's been my experience that usually a bad fillet knife doesn't flex enough but in this case the tip of the blade actually flexes too much for bigger fish. It's great for smaller trout and I would imagine perch, bream...etc but I've used the knife to fillet flounder, speckled trout, redfish, snapper...etc and the blade just doesn't have a stable spine when it comes to skinning the bigger fish. A 6" Rapala or Dexter works much better and faster. Also, the knife is difficult to insert into the sheath. I think this is b/c the blade is so thin and curved that it hangs up as the knife is inserted. I have to twist the knife to get it fully inserted into the sheath.

This was a gift for my son for Christmas . He is very happy with the fillet knife ! He also has the 8 inch Chef's knife that he loves.
