Farberware Stainless Steel 7 Inch Santoku KnifeThis was the first chef's knife I bought after leaving home for college and loved using it when I first got it.

7 years later, it has had heavy use and at times was left in the sink and the edge got quite nicked and dented (..ahh roomates)

Still this hefty, beloved and at times abused knife has held up.

Recently I took it in to be professionally sharpened at Ross Cutlery in Los Angeles and the blade is as good as ever if not better.

As I now look to expand my collection to a 2nd chefs knife and compare many knives I realize how lucky I was to find this is a great well built, well balanced quality knife!

Certainly worth the $20, I love mine!!!

Farberware Pro 7" Santoku knife I have to both agree and disagree with the previous reviewer about this Farberware Pro 7" Santoku knife! I too have one of these wonderful knives from about two years ago... the one with the pointed end, as seen in SOME of the attached pictures. I LOVE it and use it for EVERYTHING... so when my birthday rolled around this year, my mother-in-law ordered me another one as a gift, so that when my first (old) one is dirty, I still have another one to use! :-) However, Farberware has now CHANGED this product... to the one with the rounded end, and it is now some sort of grippy plastic handle. The weight of the new handle is much lighter, and does not "feel good" in your hand. The new weight makes the blade much too heavy in comparison, and makes it harder to use. To sum up, I HATE it and will be returning it back to Amazon.

Therefore, if you don't have a Santoku knife already, this may be an inexpensive option for you... but I would try to look for the "old" pointed end version, which is MUCH better, instead of ordering this newer rounded handle version here.

P.S. I have found at one of our local stores a Farberware 7" Santoku version similar to this knife, but with a red and chrome heavy-duty handle. So if you don't mind the red color, it feels much better in your hand. :-) Point is, I guess you should actually hold the knives in your own hand before you buy... don't order sight unseen for something you are going to use daily.

Funny story: I was in a hurry this knife at a grocery store years ago as stop-gap cutlery. I never expected it to last or be particularly good. It's a great general purpose knife that I use frequently for chopping and slicing. Overall, it's well designed kitchen knife that has stayed sharp with regular honing, hand washing and heavy use. The knife has a good mass to it, nice ergonomic feel and is well balanced. The 7" size to me is perfect for most preperation needs. If you don't have a Santuko knife, I would highly recommend this one as an inexpensive no-thrills workhorse. It doesn't hold up to the quality of the Germans or Japanese but then again it can be had at a fraction of the price.

I've had this knife for about two years and I have sharpened it twice. With regular honing and cleaning, it stays very sharp and is a pleasure to work with.

I wouldn't even be on here if not for the fact that I damaged the tip of my old one and am looking for a replacement/backup.

I repaired the old one but I was so impressed by the steel after it fractured, that I figured for the price I'd get one or two more. It's nicely hard without being brittle and takes an edge that I would put up against any knife. I admit that I am a fanatic for an edge and I have experience in sharpening tools, but this knife should be priced much higher. This is a rock solid knife. I have Henckels that wont take an edge like this one. Now, the one I have is 6 years old so I am assuming that their metal processing is not changed but if it has I will post a correction.
