8' Fillet KnifeI am an avid fisherman, and this knife fits my needs for fileting fish. For sturdy or bony fish such as redfish, I use a shorter, stouter knife for the initial phase, then switch to the filet knife to remove the skin from the meat, which keeps the filet knife sharper. If is more than adequate for the whole cleaning job on speckled trout. The steel is fine grade, and holds an edge well. I've had mine for many years, and bought this one recently as a gift for a friend.

Bought this knife a few months ago for filleting salmon and butterflying trout for smoking. It's nice and long, with a flexible, sharp blade that is very durable. The holster is a nice addition even if you don't plan to take it out fishing since the blade is very sharp. I have a few other Russell kitchen knives and I'm pretty happy with them.
