MIU France Stainless Steel Fillet Knife, 8-Inch

This is a handy knife considering the price, although it is not the sharpest fillet knife I have used. It is good for occasional filleting of large salmon that we get from Costco. It is long enough to get the job done. In addition, it is also great for slicing large watermelons.

I think that the word "France" is misleading. It is a Chinese brand and Chinese made. The quality is fine and the value is good.

I plan to grind the fillet knife to 6 and 1/2 inches to make the nife more adaquate for filleting fish. The current lenght 8 inches make the knife too flexable to be a good fillet knife. 6/12 to 7 inches in lenght would make the current 8 inch knife more stiff.
