
This knife is substandard for professional kitchen work. The blade was not sharpened evenly, so veers to one side. Additionally, the handle is poorly designed. The handle tapers before it gets to the blade, so when gripping the knife to prepare for high volume chopping, there is no buffer, or finger guard, between the blade and the handle, forcing one to rest their hand on raw metal. This results in small cuts and eventually callousing on the hand with high volume work. The blade also dulls very quickly, and has had to be sharpened about four times since we purchased it, about a month ago. Overall this might be a good knife for light work in a home kitchen, but definitely is not the product to go with for high volume professional kitchen work.
