
I just received this knife and have been using it to filet anything I catch in the Florida Keys. Safe handle and very sharp blade make quick work out of cleaning fish. I cut the slabs off each side then I use a long thin filet knife to take the skin off.

These are all we use for fileting and skinning salmon in Alaska. For the price you can't find a better knife in the field or in the kitchen.
