Fairchild Red Cheese Knife

I ordered this knife with reservation. How can a plastic knife work so well?

I was very pleasantly surprised at the results.

The knife is light weight , not sharp where it may cut you, yet sharp enough that it glides through cheese like with ease.I even tried it on a block of very thick hard cheese and it worked wonderfully. The layers on the knife seem to prevent the cheese from sticking to the knife.
