I love the ergos of the handle, and the weight seems really nice. And it is plenty sharp, I have used it for splitting chicken breasts and pork chops for stuffing and it works great. Love it!

Outstanding balance and feel to this knife. I use it to find and separate the joints of the legs and wings when carving Turkey and chickens. It does a great job and is indicative of the quality of Wusthof knives. Highly recommended.

This boning knife is of good qualifty, but I thought it would be more flexible than it is. The blade is rather stiff just like any other knife blade.
