Shun Premier Slicing Knife, 9-1/2-InchThis knife is very sharp, thin, and well balanced. It wasn't finished with quite the care of the 6" chef's knife I bought just before purchasing this one, in that the metal of the handle was slightly wider than the wood creating a tiny sharp edge at the boundaries. I took a diamond sharpening tool and a fine finish stone and about an hour's work to bring the metal edge down flush with the wood, until now it feels perfect. This tool makes slicing bread, roast beef, fish, etc. a real joy.

I own 3 Shun knifes, I use them frequently and have never had a blade chip or dent or do anything except provide excellent service. This leaves me to concluded that all these people complaining about chip blades are using their knifes improperly. Harder steel can hold a sharper edge and hold it longer but, the down side is that harder steel is more brittle. If you don't use, clean, and store these knifes correctly they will break. If your going to buy an expensive knife you owe it to yourself to learn how to care for it. There are plenty of videos on YouTube that will teach anyone the proper usage and care for their knifes.

Love Shun knives..probably the best I have ever owned. They slice through a melon like it was butter. They do need to be handled carefully...always cut on a block and don't bang them around in the sink when washing..the tips are fragile and I actually broke off the tip somehow. The knife could be repaired fortunately since it was just the very tip. Expensive..but well worth the price. I have owned several Shun knives for 2 or 3 years and they are just as sharp as the day I purchased them.
