Pure Komachi 2 Series Serrated Multi-Utility Knife

This knife is great when you want to trim the excess fat from any meat before preparation. Using any stroke, small or large removes fat effortlessly from roasts, chops, steaks, etc.. No 'hacking' necessary and the lightest of touches gets the job done. If you need sharp knives at lower, affordable costs, the Komachi line is the one for you. These are the makers of the Shun line of knives and you can send these knives in once a year for FREE sharpening. These are inexpensive enough to have 2 sets, one set to send in for sharpening and the other set to keep and use while the dulled ones are away for resharpening. These prices are less that the retail store, by about $3.00 each. Just keep in mind that these knives are razor sharp and fairly lightweight so you must be careful at all times.

I'd say 4 inches of the blade are not serrated so it's good for slicing. The thin tip is flexible which enables you to remove the skin from fish easily. I also think this is an ideal knife for deveining shrimp. However, I don't think this knife is the correct size or shape for comfortably mincing vegetables. As long as you have a chef's knife in addition to this knife in your kitchen, you're pretty much set. (According to the Charlie Trotter book, Knife Skills: In the kitchen, you'll want a bread knife too because you don't want to dull sharp blades on crunchy bread crusts).

When I ordered it I thought the entire blade would be serrated, however it is not. The half closest to the handle is serrated while the other half is a straight edge knife. I enjoy the multi-utility knife, now that I know what it is! I mainly use it to cut fruits and vegetables and it works great.

Say what you will, these knives are super sharp and super cute. Will they last long enough to be passed through generations? probably not, but the for teh price, they are great. I use them to cut up fruit and veggies everyday.
