Chicago Cutlery Walnut Tradition 7-1/2-Inch Slicing/Fillet KnifeI've had one of these knives in my kitchen drawer for 25 years and It's a great knife. However for filleting fish I prefer a more flexible blade. If you gut and clean your fish first, then fillet them, this knife is just the ticket. If you prefer to fillet the fish without cleaning, which involves cutting from the top of the back running the blade along the spine, and just over the ribs, this blade is too stiff. I can't feel the spine on a salmon or trout, and you'll leave a lot of the meat on the bone, or cut through the ribs and leave them in the fillet.

My preferred knife for filleting is a Rapala6 Fish'n Fillet / Single Stage Sharpener / Sheath but caution mine is several years old and the quality may have deteriorated. You may have to spring for Wusthof Classic 7 in. Fish Fillet Knife with Sheath

For cutting up a raw chicken it's just the ticket. Nice thin blade, chicken bones are harder to cut, so you can follow along them easier.

Hence the 3 stars, because it doesn't do the job it's named for as well as it should.

For price and function, you can't go wrong. I use this knife every single day to cook dinner. I also have a chef's knife and a bread slicer. These are the only knives most home kitchens will ever need. It sharpens well and I put it in the dishwasher. This is my second one ... it's not that the old one is worn out (I've had it for 10 years) ... it's that I'm afraid I won't be able to find another one when I do need it.

I've been using these knives since the 80s,when they were about $20 and made in USA.they're alot cheaper and almost as good.

I have quite a few Chicago Cutlery knives and always wanted the fillet knife. I finally got it and I love it. Does job my other knives can't do. I also like the brand because the steel goes all the way up the handle which is what you want in a knife and they sharpener well. I have more expensive knives but I like this brand just as well and saves me money.
