For cutting up a raw chicken it's just the ticket. Nice thin blade, chicken bones are harder to cut, so you can follow along them easier.
Hence the 3 stars, because it doesn't do the job it's named for as well as it should.For price and function, you can't go wrong. I use this knife every single day to cook dinner. I also have a chef's knife and a bread slicer. These are the only knives most home kitchens will ever need. It sharpens well and I put it in the dishwasher. This is my second one ... it's not that the old one is worn out (I've had it for 10 years) ... it's that I'm afraid I won't be able to find another one when I do need it.

I have quite a few Chicago Cutlery knives and always wanted the fillet knife. I finally got it and I love it. Does job my other knives can't do. I also like the brand because the steel goes all the way up the handle which is what you want in a knife and they sharpener well. I have more expensive knives but I like this brand just as well and saves me money.
