Zhen Japanese Steel Santoku Hollow Ground Chef's Knife 7' + Vegetable Knife 5.5'I am a pro, I use knives all day. The knives came razor out of the box, it was an unfinished stone grind that could have lost its edge fairly quickly (nothing wrong with that for $38). I stropped them on a piece of cardboard to make that razor last longer (if you don't know what "stropping" is look it up, very good thing to know). Today I diced 15 lbs of carrots, 10 onions & chopped 10 lbs of zuchinni alternating between the two knives for different cuts. They are still razors and I did not steel them at anytime during the prep work (look up "steeling a knife" if you don't know, also a very good thing to know). All in all, I am very! impressed with the quality for $38. You will have to care for the edge more often than one of those $118 knives, I'm not saying these knives dull quickly.. they dull less than average, 440c is a good blade steel. But the $118 knives that these knives are modeled after are made of a steel which will hold an edge a little longer.

What I'm saying is... :)

If you don't know how to maintain a blades edge, learn how to by watching videos online. Anyone reading this review obviously cares about quality. All knives dull, all dull knives are equally cruddy. So no mater what knife you buy, it would suit you well to learn how to maintain an edge.

These knives are well worth the price, I don't regret it and don't feel that I ever will. They will be in my prep bag and commonly used for years to come.

Outstanding knife set and a great value. I bought these as a replacement for a set of Paula Deen santoku knives. Those knives are well made but I didn't like the clearance between the handles and cutting board. I also didn't care for the fact that the bolster went fully down the heel of the blade. The Zhen knives are well made. The integrated handles provide a good grip, adequate clearance from the cutting board (no hitting your knuckles) and won't crack as plastic handles are prone to do over time. I like this combo as the 7 inch does the "heavy lifting" while the 5.5 vegetable knife with it's angled blade is excellent for dicing. I'm not sure you would be able to do better for the money.
