I just got this and have only used it one day. But the steel is definitely top notch so far, a little hard to clean I got the longer yanagiba, but a wet towel then paper towel does the trick. It floats through the fish I cut with no snags at all the fish barely moves. Normally my razor sharp santoku or deba will drag the fish with it.The handle is not sealed I will probably polyurethane it for water resistance.
For 30 bucks this is a no brainer it's easily worth 70 to 80 and I'm a cheapskate

This does not have the bulk or the single bevel cutting edge of a "real" yanagi sushi knife. However, it is an excellent slicer and will give you the feel of a longer yanagiba if you haven't used one before. The thickness is probably close to a fugubiki. Excellent knife, Arrived very sharp. Cuts through the sushi like butter. So far it has retained its sharpness.Came with safty cover, box and everything the description said it had.
