4 Way Diamond Knife Sharpener Hone Sharpening Stone NewHaving tried diamond various diamond hones in the past, I was looking for a good set of hones for my kitchen knives. most particularly I was looking for a super fine grit hone for the final sharpening stage. Most of the hones I found cost upwards of forty dollars for a single grit or were too small to be useful on large knives.

This set seemed to fit the bill perfectly and at a reasonable price. When I got it home, I tried it out on my best butcher knife and got a really good edge in a very short time. Within a days time I had a sharp edge on all my kitchen knives and even on all my scissors. I was even able to resharpen a used #11 exacto knife blade.

I used the 200 grit side to quickly remove all nicks then used the 300, 400, and 500 grit sides to get a progressively finer edge. I then stropped the blades on a piece if leather charged with white diamond rouge. finally, I tested the edge by using it to shave the hairs off the back of my hand. A blade sharp enough to do this is sharp enough for any purpose likely to arise in the kitchen.

I esecially liked the fact that all four hones are locate on a single block and are held by the good sized plastic holder, which lets you place the set on the table and use both hands to guide the knife.

Note: knives this sharp need to be carefully stored both for safety, and to protect the edge from nicks. I use a wooden knife block for this purpose. Also, I never place my knives in a dish pan full of soapy water with other metal utensils. It's too easy to nick the carefully made edge or cut yourself. So every knife is washed separately immediately after it is used and placed in the block.

I recommend this set highly for anyone who needs a really sharp set of knives. For those people who are frightened by very sharp knives (and I have known several such persons), try some other system.

I normally a Lansky system, but decided to try this. I worked on a kitchen knife to two days trying to sharpen it. After eating away a third of the blade, the knife was very dull. I even tried to work on an already sharpened knife, being careful to maintain the angle and the knife got duller as I worked on it. I think the surface is uneven with all the holes on it, and pushing a blade across it chips off the sharp edge. A waste of money.
