Wusthof Pro Peeling Knife, 2-1/2-Inch

It doesn't match our set of knives with the triple riveted handles, but its a decent blade. I use it to trim meat, particularly cuts that come with silverskin or other tough tendons.

Exactly what I was looking for. Good balance and very sharp. Good addition to my kitchen. I would recommend it .
