
I purchased this item because I was tired of using sub-standard tools. This is a quality knife and very sharp (and it holds an edge). Make sure you practice your knife skills, but the benefit is that you don't have to "overwork" when cutting so as long as you keep your thumb out of the way it's great! And Amazon did a great job fulfilling the order as always!

I bought these knife three month ago. Beautiful designed. Very well balanced. Really and extremely long lasting sharpness. It is the best knife I have ever used.

When I first received this knife I was well pleased. I had never had a knife this sharp. However, I quickly learned that a sharp edge is not all that is needed. The sides of the knife have a very fine grain pattern due to the layers of steel. I am not positive but I believe this is the source of the problem. The extreme 10 degree angle of the edge may contribute as well. When slicing large dense items, like a potato, the blade is hard to pull through and if you slice a potato in half you almost have to pry the halves off of the blade. It is excellent for chopping small items but the force needed to pull it through makes it dangerous on large items like potatoes or onions, especially since it is razor sharp. I subsequently purchased a set of the Shoku knives which are much less expensive. They are fabulous and neither the santoku or chef's knife has this problem. If this knife is representative of the Hanaita series I recommend avoiding it and going with the superior but less expensive Shoku series, both by Ginzu.
