Edgecraft M475 Manual Steel Pro - Heavy Cast Metal SharpenerI sharpen my Asian kitchen knives on a Chefs Choice 15 TRIZOR sharpener. It does a great job of sharpening the blades and I am very satisfied with it. In the directions they tell you not to STEEL the blades after sharpening. This is because steeling them by hand ruins the blade edge unless you can do it perfectly (You cannot). The SteelPro 475 allows the blade edge to be maintained without misaligning the edge and takes only seconds to use. It keeps the blades razor sharp without sharpening them very often. The 15 TRIZOR is easy to use but it still takes more time and effort then using this device.

I have found I that cannot sharpen pocket knives on the 15 TRIZOR. The knife blades are too short to align properly in the guides. I have no problem sharpening them with a hand stone system but it takes time and this device keeps them sharp much longer.

This is not a sharpener. It is a STEEL. You must start with a good edge. This will not fix a dull knife that needs sharpening.

The description and picture of this on Amazon at the time I am writing this is incorrect. It shows a model 470 (which looks the same but is a cheaper version) and describes it as a sharpener. It is not a sharpener.

I thought this was primarily a sharpener (as indicated in the product title) when I bought it. Only after receiving the product did I realize that this was essentially just a set of "steels." It's good for what it's intended to be, but the title of the product was a little misleading.
