This knife is perfect for 'processing' chickens. Although I have good quality knives in my kitchen, none of them seemed to do the job of cutting around the vent very well. This knife is the perfect length for that. It has a good edge on it and it holds up well, even while processing many birds. Very happy with this purchase!
