I actually picked this up from a local store looking specifically for a santoku blade. This knife totally fits the bill. It cuts everything with absolute ease, even aged, hard cheese it slices like melted butter. It's very sharp, and doesn't seem to dull. I've had this one for a few months now, and use it practically everyday. Cutting vegetables is effortless and works well for meats too! Slicing chicken breasts into strips takes seconds, requiring only one or two strides with the blade.
