Many people tried to talk me out of this design but I had never been that comfortable with the other style & for this price I thought I'd give it a shot.
I'm glad I did.
Boning is a snap....but I like it best for removing "silver skin" on meat.
The textured grip is a great idea. (My old Henckles had the slipery handle.)
I can't find anything NOT to likeabout this knife.
The other day I noticed my butcher using a curved boning knife & asked him about it. He said that of the 6 butchers working at the shop about half like the curved & the other half like the straight.
So it's just a matter of preference. I really like this one better.I have used these knives for the past 35 yrs. I'm a meat cutter and started when I was 14. I was given one of these and have stayed with them ever since. They are awesome to say the least. They are sharp and can take the punishment of the day to day work load.I'll always use this brand. They are diffinatly the best on the market. Thank you for a fine product

Given the price (in the $20s), and ability to sharpen quickly, this is a great knife to do the chores when a sharp blade is critical. Yeah, it gets dull, but will sharpen quickly and does the job for me.Tom C

This is NOT a one star review of the product, its a one star review of the product description. I love Victrorinox knives. I have been using the same rosewood handle curved boning knife since 1987. I bought it for a meat cutting class in college, and I use it to process about a dozen animals a year, including beef, lamb, pork, and deer. The reason for the one star is that the product description does not identify this knife as having a flexible blade. Boning knives from Victorinox come in a variety of blade types and levels of stiffness.The model number is correct for the flexible blade, but who looks at the model number? Don't assume, like I did, that the description accurately describes the item. Research the model number and make sure that the item you want matches the item you are ordering. I suggest you look at the knives at [..], then order through Amazon.
Thankfully Amazon makes returns easy and they stock the knife I actually want.
