Progressive International Herb Pro

Progressive International Herb ProThis is a pretty handy gadget for those who enjoy cooking with fresh herbs. It appears to be pretty well made and the container is very useful for other storage or measuring purposes. The busy chef will likely prefer something faster than the "scissoring" of the herbs in the container, however; also, if you need finely chopped herbs or to prepare more than a small amount of same, this is not the right tool. Still, a good value product. The scissors are useful as floroal snippers too.

The beans are in and these little shears snip the ends off faster than anything. Yes, they're great for herbs, but also for other kitchen tasks. Any time my regular kitchen scissors get mislaid, I can reach for these shears as my backup pair. The multi-blade herb shears may be great for herbs, but not for opening a pouch of frozen veggies or liberating an individually packaged fillet.

These shears can be locked closed and hung from a hook so they are always in easy reach. I use them to harvest herbs from my Aerogarden (AeroGrow AeroGarden with Gourmet Herb Seed Kit, Black) or my summer deck planters as well as cutting the herbs into small pieces. The little container actually works quite well for mincing and measuring, but I more often just cut things 'freehand' directly into the pot or salad. The spring action makes the cutting job easy. I'm pleased with this purchase and use the shears frequently. They are an excellent kitchen multi-tasker.

I cook with a lot of herbs and I hate how much time it takes to chop them on a cutting board. It leaves me with green stained fingers/nails. I've tried chopping them in a food processor, but it never seems to work well. These scissors are wonderful, especially for the price. You have control of how fine the herbs are, there's very little storage space needed for this item and my nine year old daughter likes to help chop herbs now. That alone is worth the cost. Seriously, my chopping time was cut in half and no green fingers!!

Mincing herbs such as Rosemary, Coriander and Parsley is quick and easy with the Herb Shears. Clean up involves little effort. For this product, the price is reasonable.

I got this recently and found it to be very useful for finely mincing herbs. It also works well for a chop-like consistency. I like that you can keep unused portions capped in the same container.

Very durable high quality silverware. I had a set I received as a wedding gift and wanted more to match. These were perfect except that the twist part has a satin finish instead of shiny like my other set but it still looks nice and the difference isnt really that noticable. These have lasted through the dish washer a million times and still look new. I will definitely by these again if we need more as they are very comfortable to hold and their weight feels very high quality. Hampton Forge HMC01B607A Continental 15-Piece Cutlery Set

Hampton Forge HMC01B607A Continental 15-Piece Cutlery SetI purchased this knife set after having held the chef's knife and felt that I can love its wonderful weight and balance. It has the similar feel to a knife from another company which cost almost three times as much. I've had the set for about four months now and can not be happier. It's a "humble" knife not heavy or impressive. Rather, it's sleek and balanced and when it touches the food, it just naturally "sink" into the food and cuts with minimum pressure.

I had only a passing period of regret when some spots which looked like rust spots appeared on the knives. I scrubbed the spots off with an abrasive cleaning pad and it came off, but reappeared. Since everything else about the knives were so wonderful, I called the company's customer service for help and they offered a replacement. They were very curteous and very nice. Excellent response.

The same type of spots appeared on the replacement, but because I could not bear to part and give up on the knife, I kept scrubbing the knife for several times. The spots have not come back again for over a month, now, so I no longer have to scrub them. In fact, they now look like new with just normal cleaning. Now, I wonder whether I should've been more aggressive with the first knives as well.

So, in sum, purchase these knives. They're worth every penny. You won't regret it. If some strange spots appear, give the knives a good scrubbing for a few times and they'll be tamed. Enjoy!

Overall, this knife-set has a professional feel to it without an inflated price.

* Balanced so well, that you can practically balance it on your finger. That's not the only benefit of a well balanced knife, I think it gives better cutting precision too.

Pros Summary: Precision + Sharpening = give me a hair to shred, SHARP!!!

Cons

* Didn't seem sharp upon arrival. However, that was quickly remedied using a Presto Eversharp electric knife sharpener.

* Anxiety of the plague stain another reviewer mentioned. See note below.

* Hand wash recommended The documentation recommended hand washing for best performance/durability. Could this have to do with the plagued stain Ann described? I hand wash just in case. This might seem inconvenient to some, but it's also a trade-off to time/effort potentially saved from better performance of the knife (after sharpening). I wash, then dry immediately to avoid staining these beautiful knives.

Cons Summary: The cons can be eliminated by: 1) hand washing and drying immediatley 2) sharpening thoroughly 1-3 times upon receiving

OVERALL

This knife has a professional feel without an inflated price once you eliminate some of its cons. See pros/cons above for details.

Bought these for my new apartment because I needed decent cooking knives on a budget. They all have proper weight and rigidity. The construction exceeds my expectations. Not being a chef, I don't know how versatile this collection is, but I easily cook for 4 with these a few nights a week. I did not know how to use an edge honer, and the included instructions were not very helpful. However, YouTube was very helpful.

I received these knives over 8 years ago as a gift and over the years I have worn out the metal end and broke the tip of the middle knife by using it to open something I shouldnt have done...I love the fact the middle serated one is still sharp and I can sharpen the other two with the sharpener...(this is needed). Later in life, I was fortunate to make a Swiss Miss a Mrs. Typically frugal and practical... and from a family that has had the same Restaurant Bauernhof for centuries... so, when my prized Sabatiers were lost in transit, she replaced them with a more economical (stamped not forged) Swiss brand, R. H. Forschner by Victorinox.

Suddenly, this 70 year old retired chef cut through decades of knife prejudice... the sharpness, balance, thin blade and heft brought joy to my kitchen again... and for a fraction of what I would usually pay! It has been several years since my first Forschner and it is just as good as the one I just purchased.

Last fall we visited Oberlunkhofen, Switzerland, where my mother-in-law continues as chef of the family restaurant at 82 years of age and her 86 year old sister-in-law is the waitress. Her wooden handled knives were of excellent quality but could no longer pass the NSF rules. I purchased a set of H. R. Forschners for her at a Swiss wholesale restaurant supply house... at a price higher than we could have gotten them on Amazon.com! Not only is she a cutlery pro, but she values price and practicality even in gifts. Now she thinks kindly of me as she cheerfully slices through each day.

Don't let the all-business black non-slip handles fool you. These are some fabulous knives.

They don't have the thick back of most quality forged knives (these are stamped). They don't have rosewood handles. They're not made to pimp up your kitchen or match your mixer. They're made for cutting things, and they do this exceptionally well.

The blades are exceptionally shiny steel, very similar to Victorinox's Swiss Army knife. Things don't stick to the blade much. Like Swiss Army Knives, they also have a comparatively thin back and very little 'wedge effect.' This means when you cut things, they don't fly across the room. You don't push. The exquisitely sharp blade just kind of slips down through, leaving even carrots right where they were.

I'd never understood how chefs managed some of the fast cutting they do: now, I get it. I've owned some pretty decent knives before, but these are something else entirely. For the price, if you're serious about sharp, you can't do better.

I purchased the 8 piece Forschner block set (plus the 7 inch Santoku), and highly recommend this set and the extra 7 inch Santoku which fits in the same block.

The deciding factor for me were the comments by professional chefs and butchers on various web sites

including this one.

The problem with purchasing individual knives is that the cases are very expensive (with shipping and handling the mark up over mfg cost must be 1000%?), but you just cannot have sharp knives loose in a drawer. The block is $30+ if you compare the piece part prices, and if you have small kitchen it uses the least space, further away from kids hands, less fiddly than the knife safes as well.

As for what you get in the block set, it has just about the right combination of knives for me, the Santoku

knife fits in one empty slot as well (thanks to reviewer who commented on that). There's a steel included as well

which is essential. The boning knife is longer than the one in my old set, but I don't do use it that much. There's one spare slot for a smaller knife.

These knives are all very sharp, and I'd say the 8 inch chef's knife is the largest I would ever need,

better for heavier cutting, but also OK for fine cutting as well. The 7 inch Santoku is lighter and I like using it-I can see why it's popular, better for potatoes/vegetables but can also handle heavy cutting as well. They both are great for fine chopping using a rocking motion, and with plenty of knuckle room. With a 2 cook kitchen having the two knives in the block seems a good plan. The Santoku has slightly different handle shape than the other knives which may be for Asian style chopping (versus rocking), I'll have to experiment.

As for using in a dishwasher, one Forschner supplier recommends no, the reason being the plastic

cover on the dishwasher rack will be cut and may cause the underlying metal to corrode, not to mention

knife edge wear, and change in blade temper (although I am sceptical about this last one) . If you clean them as you go this isn't a problem.

You also get a boning knife which you may or may not use a lot. You get a slicing knife that looks like a cake icer, but one side is sharp, you'd be better off getting the granton edge slicer or a serrated one. Other than that you are getting a block (buy the Kapoosh Universal knife block for $30 rated highest by Cooks Illustrated), kitchens scissors and a sharpening steel which all can be gotten for dirt cheap. You only have two open spaces on the knife block, so you can't expand much either.

Go to Cooks Illustrated and look on Amazon to see the best individual knifes and you will have exactly the knives you want for a cheaper price.

Sure, I read about how great Forschner knives are for the money, but I considered my old Chicago Cutlery set to be good enough. How much different can one set of cutlery be than another, anyway? After all, I'm no pro chef, just a home kitchen hacker.

Curiosity got the better of me, and I got the Forschner Fibrox eight piece set.

The items in the set are well chosen for the average range of kitchen tasks, although I would like a smaller flexible paring knife rather than the included four inch rabbit (?!) knife. I am mildly surprised at how well the serrated bread knife handles a block of cheddar or a tomato; it might be the favorite of the bunch. I also like the shears, and find the 10" slicer large enough to handle anything I'll ever serve. The boning knife makes taking the skin off a salmon easy. The chef's knife is big enough for me and not too large for my better half.

The Fibrox handles are comfortable, give a secure grip and fit my big paws and my wife's smaller hands. The knives all "feel good" to me, well balanced and solid. Yes, they are sharp, and the included steel hones them with little effort.

If you've read this far, you might be like I was, wondering if good knives can really be that much better than "good enough". The answer is a resounding yes. They really are a pleasure to use, and a job like cutting up a chicken for frying is now a chance for me to enjoy the quality of these knives rather than just annoying drudge work.

If you still aren't sure, order a Forschner Santoku or mini chef's knife to try for yourself, and when you do order the set it will find a home in one of the two empty slots in the block.

Update, I have given this product a few chances. The knife is totally awesome as all Ginsu knifes are, but the fork is kindof "weird" at first I was extremly happy it was so sleek looking, but to actually carve something with it, there is a huge risk of slipping because there is no "finger" guard. So I use a previous "carving fork" and I use this fork to serve at the formal table. after everything is carved.

Otherwise I have been using my Ginsu since I recieved back in 2009 and its still extremly sharp, cuts thou any "tough" product and can slice a tomatoe with out brusing it or mutalating :O)

i was so disappointed when i got this knife. it was seriously more dull then the old knife that i just threw away. i'm not sure why it received such high marks from other people. it squished my bread when i used it, and i had to use a lot of force to cut through the crust. a good sharp knife should be able to cut through crusty bread like butter.

I am not as much of a fan of this knife only because the knife sheath doesn't stay on well. Otherwise I think it is okay for the price, and it is nice a sharp. I put it through my dishwasher and no annoying rust stains have showed up. What a good thing!! That is my pet peeve about buying knifes, is that once you put them in the dishwasher they either change colors or rust. This has not happened! Thank goodness!

I actually bought two sets of 4 place setting in hunter green for a service of 8. I already had 7 place settings in white from another company (which I couldn't find again} and wanted to make a set of 8. so I hoped the Ginkgo white would match. It matched ok but was so much better quality and weight that I had a hard time talking myselt out of discarding the other place settings and replacing them with the Ginkgo white. I love the Hunter Green, and plan to buy the Red or Navy, maybe both.

If you are determined to only buy "made in the USA products" to put in your baby's mouth, don't be fooled by the Nambe story.

Was so taken by company's prideful claims for their "New Mexico products" named after a small town near Santa Fe where the first studio was created. They host world renown artists to design their pieces, and claim to send their products for the U.S. Department of State to take overseas as gifts.

Okay, okay so I'm one of the last people around to believe people in the U.S. still manufacture nice products, and want assurance of safe metals, no child labor factories making my goods, etc.

This knife is one of three Kyocera ceramic knives I purchased to make a set. They are three different sizes (this is the smallest.) They are all great. A word of caution: concentrate on what you are doing when using ceramic knives -they are very sharp.

The peeler is not very good. I have a pair of Oxo peelers, which are a much better purchase.

Shun DM0701 Classic 6 Inch Utility Knife

Shun DM0701 Classic 6 Inch Utility KnifeFirst off, this knife is beautiful. The wood handle and steel cap give it a sophisticated look, but most of all, it is the Damascus blade that really makes it a show-off.

Back before guns, a lot of effort went into making steel sharp for swords. The Damascus technique involves folding steel tens or hundreds of times to achieve the ultimate in sharpness, and it dates back hundreds of years.

This knife is a reference to those ancient swordmakers, but not exactly. Unlike true Damascus knives, Shun knives are laminated: the inner layer is a high-tech piece of expensive super-steel (called VG-10) and the outer layers (protecting the inner and bringing down the cost) are a more ordinary stainless steel. Unlike the swords of old, only the outer layers on this knife are folded. The VG-10 inner part, the part the edge is made from and the part that cuts, is a single forged piece. So in this knife, the Damascus pattern is more for looks than performance. Perhaps it also helps keep food from sticking.

However I don't care what it is for it looks fantastic. It also gives an exotic, handmade look to your kitchen cutlery. Normally Damascus knives are much, much more expensive.

As for cutting, the VG-10 super steel combined with the Japanese obsession with ultra-thin, ultra-sharp edges make this knife wickedly sharp. The VG-10 core is designed to keep an edge for a long time, however all straight edged knives will need sharpening. If you never bother to sharpen your knives, get a serrated knife instead.

The handle is a wood product. It is based on wood, but resin-injected and sealed so it repels water. Shun advertises it as dishwasher safe, but that would be like putting your fine china in the dishwasher you could do it, but why take the chance? If you do dishwash it, you might want to take it out before the drying cycle, and keep the blade away from anything that could nick it.

This knife is very light and sharp. The 6" length is very useful to me. I use it sometimes as a slicer, sometimes as a parer, and sometimes as a sandwich knife. It has become my main go-to knife for small jobs. Unlike other, duller knife brands, this straight-edge knife has no problem cutting bread or tomatoes.

All in all, this is my ideal balance of performance and looks. There are cheaper knives on the market that perform just as well (some 1/3rd the price) but none that look as good, at any price. It is worth it to me, especially since knives generally last for decades, sometimes lifetimes.

The Utility Knife is definitely one you want in your collection, but I would rank it as the top 5, not the top 3.

Shun knives are beautiful creations period. Since I'm Asian, I love the tradition look and feel of this Japanese knife. I love the beauty of the blade and the dark, polished, Pakkawood handle. The unique "D"-shaped, Wood handles are preferable. The shape fits my hand perfectly, and the wood does not get slippery when wet providing a very secure hold. The steel is of utmost quality and sharpness. Do not put this blade into any old electric knife sharpener! Electric knife sharpeners are made to put one angle on any blade. These blades come with a 16 degree angle and you don't want to be changing that angle. There are electric knife sharpeners that can sharpen these knives, but you'll have to do some research and find out which ones can be a fit with these knives. I prefer to hone with a sharpening steel and manually sharpen with a stone if necessary (and I don't see it being necessary to touch it to a stone any time soon). The blade is sharp straight off the factory and as Alton Brown says it's the sharpest straight out of the factory edge as he's ever seen.

These knives are more expensive than most, but I think it's definitely worth it. To have the sharpest, most beautiful knife around it's no contest. If you are on a budget, build your collection slowly. It's been said that there are only 3 knives that are the absolute basics for any kitchen: A 8" Chef's Knife, a Paring Knife, and a Long Serrated blade for cutting bread and larger items. I would add a thin utility knife and a boning knife to that list next. Then I would add those "in-between" sizes as I get more money flow in. =)

If you plan on spending any time in the kitchen, good kitchen knives are a definite must. Preparation is the bulk of cooking and when you have good knives, it cuts down on the danger of cutting yourself, it adds pleasure to the work, and it cuts down on prep time. Knives are also a very personal choice and it's best to at least go to a store and try it out for yourself first. Shun Knives are designed by the Japanese, so remember it's designed for small hands. This makes it fit most women's hands perfectly, but I've heard of guys with larger hands not like it so much and going back to the German knives. So definitely try it out. It's a personal thing, it needs to fit you.

Why spend so much money on a knife? Well, if you spend a lot of time in the kitchen, and you almost always have to bust out a knife to prep a meal from scratch why not use the best? Why spend that time with items that you love and brings you pleasure to use? Many times, it's the small things that brings us the most pleasure in life, and I consider my Shun knives as one of those things. Having something so beautiful and yet so sharp and perfect it makes my time cooking just that much more enjoyable.

Another good thing to know is that although the Shun Knives are usually offered for right-handers, you can get these knives for left-handers. You just need to find the guys who stock and sell those ones as they are less known, and less common.

I own two Shun knives, three Globals, a Victorinox paring knife, Chicago Cutlery and a really nameless high carbon steel knife that cost 3 bucks. I usually sharpen my high end and low end knives with a sharpening stone and use the Chef's choice 110 for middle of the road knives. The Chicago cutlery knives just take too long to sharpen by hand. The edges are the dullest of the whole lot of knives mentioned. The victorinox line is less expensive than the Chicago Cutlery. The Shun is trivially easy to sharpen requiring the fewest number of strokes to achieve the sharpest, most razor-like edge. Here's the shocking news, the high carbon steel can hold an amazingly sharp edge that rivals the Shun. Unfortunately, it holds its edge for less than one cooking session and it'll rust if you breathe on it. Really you should oil it before you put it away.

What about Shun vs. the Globals? The globals have an awesome handle, wonderful grip, excellent fit to my hand (i'm a medium height woman with a really small skeletal structure but my hands are a little larger than you'd expect because I have long fingers). The weight of the Global knives is superbly balanced. With my height, hand size and skeletal structure most long chef's knives are out of the questions but even the 10" Global feels balanced and usable. I enjoy slicing, dicing and chopping with the Globals except... the edge on the globals is harder to maintain than the Shuns. You have to sharpen the globals more frequently and it requires more strokes than the Shun. So for my smaller knives, I reach over and over again for the Shuns.

What about the Forschner Victorinox with the fibrox handle? Great little paring knife! Light but stiff blade, grippy handle, maintain with an accusharp knife sharpener-inexpensive, throw it in the dishwasher, sharpen it with a few strokes. The edge isn't as good and doesn't last as long as the Shun but it's so easy to sharpen that it is usually sharper than my unsharpened Globals (and I steel the knives every time I use them and sharpen regularly). Use & abuse and it performs year after year. Surprisingly hard to find these knives in stores.

What about the Shun handle? As I mentioned, it's not as well fitted as the Global's but is actually perfectly functional. I have the Classic a wood & resin fusion material. Since I've had my knife for seven years now and my roommate KEEPS -PUTTING -THE -KNIFE -IN -THE -DISHWASHER -EVEN --THOUGH -I --KEEP -REMINDING -HIM -NOT -TO -DO -THAT, the handle no longer has the deep black shiny finish. Consider the Shun steel handle line if you have roommates. Shockingly, the blade is not ruined by this treatment, it is so easy to restore the edge.

And why do I hang onto the Chicago Cutlery knives? Sigh, they are my roommate's favorites. Go figure. But this guy puts knives in dishwashers.

I believe if you're serious about cooking, you should own great cookware and excellent knives. I finally stepped up and got excellent knives. For those who haven't heard the hype, Shun is one of the most respected knife brands in the world. Check them out on the Web at .

Great features of the entire line include these cool "D" shaped handles that fit your hand better. Each knife is made in a rightand left-handed version ( for lefties). The steel used for the blades is harder than what you would find in most other knives. The knives are EXTREMELY sharp. One thing to note about Asian knives is that they must be sharpened at a different angle, 16-18 degrees vs. 20 degrees for German knives. The Shun steel takes the guesswork out of getting the angle correct because of the flat edge on one side of the metal disc below the handle.

It's been a while since I've had a utility knife, but I'm learning quickly. If you're building your set and want to take care of the must-haves first. Move this down on your priority list. Get the chef's, paring and bread knives first. With that said, there is a place for this knife in your kitchen. As with all of my other Shun knives, this one is extremely sharp and it's relatively light. It doesn't take as much force to slice and chop.

This is the eighth Shun knife I have bought, as I have been putting it off for close to two years. Now, I'm glad I broke down and got it, even if it is not one of the most commonly recommended sizes. Other reviewers have noted that it may tend to knick, and I can see that as a possiblity, as the blade is thin for its size. But this has at least two virtues. The first is that it is incredibly sharp, even sharper than the big 8 inch workhorses, the French Chef's knife and the Santoku. More especially, it is sharper than the Shun boning knife, whose primary virtue is to be flexible, to easily work around bones. But it isn't as flexible as this one. It is also excellent for cutting through tomato skins. And, since it's smaller than the big chef's knives and vegetable knives, its easier to handle. It is even as good as my old serrated German 'tomato knife', which was not as good for other things as this little gem. In fact, it may even be better than the smaller pruning knife when working with tomatos and sweet peppers, where a long thick blade is a drawback.

As long as you don't use this knife where a heavier blade will work better, this one should work quite well, and stay sharp, with proper care. It works for some things because it is lighter and thinner.
