You know how annoying it is when people REPEAT themselves? Like once, twice, OK. I get it. You like the whatever. (or dislike the whatever) But every time my husband or I use this knife we have to say HOW MUCH WE LOVE IT. We live in one of those areas of the world where crisp crust sourdough bread is sold just about everywhere. It's great, on the first or second day. Sometimes, depending on the weather, the third. But unless you want to tear a piece off the loaf with your teeth it must be cut. And that's mighty difficult even when bought minutes before. The bakeries have slicers, but we don't like them. Too thin, and slicing the whole loaf at once dries it out.

So for years we've used what we thought was a good/adequate bread knife. Then I read on David Lebovitz's blog a best-beloved, that I NEEDED a Dexter Russell knife for my sour dough French bread so I ordered one from Amazon (also a best-beloved). And now my husband (also a best-beloved) and I bore each other silly extolling the virtues of a knife. Really pathetic, don't you think?

OXO Good Grips Professional 8-Inch Chef KnifeThis is an unpretentious, capable tool that is likely to get lost between $5 ginsus and $240 Shuns. It is comfortable to use, has reasonably good steel, and is balanced well. It is a good using knife and the attractive price just sweetens the deal. Do the math--a solid tool for $20 something, or a bit more weight and marketing for $120 to $240.

I am a bit of a tool nut, and I own German Wusthoff, French Sabatier and Calphalon knives made with German steel. They are fine knives, but let's face it, they can't do anything the good grips knife can't. Yes, a bit more weight comes in handy when you're doing serious chopping for hours on end, but I try to avoid that. I also favor a 10" cooks knife, but most opt for the 8" model. This is an ideal primary knife for a new cook who is ready to go, but too smart to drop a bundle on a brand name.

Rust has not been a concern, but I keep my blades clean. I don't throw them in the dishwasher and I steel them often.

I am a Chef Instructor at a training facility. I use these knives as a graduation present for my students. They have a good weight, shape and an ergonomic handle. OXO is a fantastic company. I SWEAR by their tongs! They rock. I have never been dissapointed by this line for the value and price. If you want to keep your knives sharp, NEVER put them in the dishwasher. Hand wash only!

This is a great knife good balance, good feel in the hand (the grip is excellent). It is an outstanding value for the price.

But, like all good knives, you MUST take care of it to maintain sharpness. Clean and dry it (by hand) immediately after each use. Don't even THINK about putting it in the dishwasher. It is preferable to use it on a softer cutting surface (like wood).

Take care of this knife and it will take care of you. It will hold a sharp edge without frequent sharpening.

I bought the "block set", but I use this knife way more than any of the others. I has great balance, stays sharp, and feels great in my hand. I Never put it in the dishwasher (no quality knife should ever go in the dishwaher). I frequently put a few strokes on the round steel that came with the block, and it's back to razor sharp.

After 2 years of use, I can't see any reason to spend more on a more expensive brand, which is why I'm buying another one for my mother-in-law.

There's not much to say other than it's a plastic knife. Cheese doesn't ever stick, but you have to put a good amount of force on it. I think a metal one with the ripple design would be amazing, I wouldn't personally recommend this to anyone though.

Everyone should have a chef's knife, along with a pairing knife, and the santoku is a good number 3. The cutting board is really great, but there are some improvements that can be made.

The pairing knife feels like it is made of tinfoil. I don't know how long it will last but it is good to have a spare one of those. I would recommend as a design improvement a more grippy handle, it kind of feels like it will slip out of my hand at the worst possible time.

Prodyne White Marble Cheese Slicer

Prodyne White Marble Cheese SlicerWhile the marble itself is very high quality and looks great, the handle grip is cheap plastic and very poorly made. The very first time I used it, the wire stretched quite a bit because the handle did not hold it securely. Now, I have to re-tighten the wire almost every time I use this cutter. I strongly discourage anyone from purchasing this product.

UPDATE: A short time later, the handle broke completely. I just cannot understand why Prodyne would pair such a nice piece of marble with a really, really cheap handle.

I had this cheese slicer for six months and it worked fine until the cheap plastic handle that holds the wire cracked and broke. It is now useless.

I purchased this cheese cutter years ago in Rudolph WI at the Wisconsin Dairy State Cheese Co. (which is also 5 star). I personally eat cheese with every meal, so the cheese cutter gets a LOT of use. In fact, we just started on the 3rd wire. Xmas day, one of the grandkids accidentally broke the cheese cutter, so I am ordering another identical one.

I received my slicer with the wire broken. And some of the marble was chipped off around where the wire lies. Seems like it would be a good product, but doesn't seem to be very well protected in the packaging.

Oak and Walnut Steak Knife Block, Cherry and WalnutI purposely chose this knife block because it was made in the USA. While the workmanship is adequate, I do have to admit that I'm a bit disappointed it was not made better. When laminating sheets of wood together, there should be no gap between laminations. This has some minor gaps. The finish is a bit on the thin side. Had a finer saw-blade been used when cutting the block to size, the finish would probably have looked better. Unfortunately, either a dull blade, or a course one was used and saw marks can be seen beneath the finish.

While this steak knife block is attractive looking and quite serviceable, I pay a bit more for American made products because I expect superior quality. Mine didn't have that. I hope that was a fluke.

I bought two of these steak knife blocks and really like them. You can tell right away that the blocks were carefully handcrafted, the slits are all even and appropriately vertical. The price is a bonus because one would expect these to cost much more!

Vegetable Cleaver

Vegetable CleaverInexpensive, razor sharp and stays sharp. Just don't leave the blade wet for more than a minute, it will rust--but that's just the type of metal used, no big deal. Light weight and decent balance. I recommend it.

This is carbon steel that will rust if abused, but it takes a very sharp edge. I sharpened mine once when I got it. Since then I havent sharpened it at all. Before every use I give it 5-6 swipes against a ceramic steel to true the edge. I also keep a wet sponge and dry towel by the chopping block so after every use, the knife is wiped clean and dry (takes about 5 seconds). Six weeks later, the knife still shines like new and is sharp enough to cut a tomato without bending the skin.

It really doesn't take any longer to treat a knife with respect than it does to abuse it. It is just a matter of training, my knife is always clean sharp and ready for action. I can wipe it clean and sheath it (in folded cardboard and duck tape) as fast as you can throw it in a dishwasher. If you want to leave it in the sink or store it in the dishwasher with food goo and growing bacteria, then this won't be the knife for you. In that case get a TV special ginsu or Ron Popiel stainless knife guaranteed for life against abuse, and take some drugs to combat the bacteria experiment blooming in your sink and dishwasher.

I needed a wok and bunch of other kitchen stuff for a new apartment so I ordered direct from Tane Chan at . The knife was the cheapest she had, but it is a great knife. I use it in preferance to my more expensive (and heaver) knives 95% of the time. It is light, sharp and easy to care for. What else matters in a kitchen knife?

I bought a couple of Japanese high-end cleavers (Shun and Tojiro) before I bought this thing, and I bought a stainless Forschner after. None of them measure up.

The Wok Shop cleaver takes an incredible edge in a minute or less. I can swing it through a paper towel held in my left hand and cut the towel in half. It stays sharp long enough to do a lot of work. The balance is good. The blade is thin enough to allow for onion slices so thin you can barely pick them up. It makes a good shovel. It squashes garlic so you can peel it. It minces things much faster and better than a chef's knife, which is something I can't explain. The back side tenderizes meat.

The only problem with this knife is the rust, but what do you want for ten bucks? I gave my Shun away because it was junk, and it had to be treated like a sick baby. The Wok Shop cleaver is so good, I don't mind hand-washing it.

This carbon steel cleaver will outperform knives worth 5 times its price. When properly sharpened it cuts vegetables as fine as you could ever hope to to get. It's solidly built and feels good in the hand. It also sharpens very easily. Now, as any good tool, it needs proper care. Wash and dry it soon after use or it will get a layer of rust. If you can't make that commitment to this great tool, then buy yourself a stainless steel one.

I received then knife really fast and they tossed in a bamboo back scratcher. One thing the add didn't say is that it is a #2 Cleaver(8"x4") I'm glad I didn't get a #1. There was a little rust nothing to complain about It cleaned up easy. The edge needed a little sharpening not bad at all. I used the box it came in to make a case/sleeve for it.

Food Network 4 1/2 Inch Deba KnifeThe damascus steel knives offered by The Food Network are amazing. Sharp beyond all belief, each one incorporates features that are a delight to behold. Each knife has grantons (except for the deba), a round handle (much easier on the hand than square handles), and a neoprene grip. The damascus steel is wickidly sharp and the entire knife has excellent balance.

I own the santoku, nakiri, deba. and sheep's foot knives (although the sheep's foot is not damascus steel). I heartily endorse these knives and I eagerly await their next release.

I love food network products. I trust the name, as it is always great quality. This knife is like a mini-chef knife, and it is extremely sharp (probably the sharpest knife I have ever owned). Everytime I use this knife, I am impressed by the quality. The sharpness is almost scary.

Wusthof Ikon Cook's Knife, Blackwood

Wusthof Ikon 8-Inch Cook's Knife with Blackwood HandleI have knives from the Henckels Pro-S, Sabatier Grand Chef, Wusthof Classic, and Shun lines. I was curious to try the new Wusthof Ikon line, and I have to say, I'm hooked. There is a substantial premium over the regular Classic line of knives, but I'd have to say it's worth it.

Aesthetically, the new design is more pleasing, and has modern, flowing lines. The classic Wusthof red sticker is formed into the blade itself, so no more of the sticker coming off during washing! Also, the tang extends all the way to the bottom of the handle, ending in a sleek metal cap. Lastly, the bolster is much thinner, making the knife easier to sharpen.

Out of the box, my Ikon was as sharp as my Shun Nakiri. A few swipes on my steel made it even more so. After an hour of cutting, I greatly appreciated the new ergonomically designed handle. It really makes prepping much more comfortable. The overall balance is skewed slightly towards the handle, but not noticeably so.

In conclusiona great update on the Classic line, with functional improvements. This is now the first knife I reach for from my block.

I don't have experience with other high quality knives, this is my first. I have worked half a year in a restaurant using low quality knives that don't get really sharp and get dull fast, and compared to that, this knife is a lot more sharp, ergonomic/light, and therefore require less effort to use.

I was very pleased when I tried to cut some potatoes, with a little slicing motion it cut through a potato almost like it was fluff. Slicing many things is almost effortless, but the thickness of the blade does slow you down sometimes with things that don't want to "give way", like when preparing an onion to be diced by making multiple, incomplete cuts into it. I don't consider this a "con", as the thickness does make it more durable than thinner and more acute angle blades.

Since it's pretty much all I could wish for in a 6" chef knife, what I'm about to say aren't really complaints, just things I think people should consider if they are looking at this particular knife.

1. I have medium-size hands for a man, and this knife is too small for me to comfortably hold it with thumb and index finger pinching the blade. The long contoured handle makes it so you can grip it with good control and less fatigue... including the popular one with all fingers behind the bolster. When I need more precision, I pinch the bolster, but 90% of the time it is unnecessary. If you are a fan of pinching the blade like me, you may prefer the 8 or 9" chef knife. If you have large hands, don't get this knife as your "go to" knife! Unless you actually are comfortable with a 6" chef knife as your primary knife.

2. I BELIEVE that the blade is made of the same composition as the classic ikon black and classic ikon creme, but classic ikon black does have that ugly red sticker formed into the blade. If I am correct, the blackwood handle increases the price considerably. I personally don't think it's that pretty, my knife (all should be unique) is darker than most pictures online, and in person you can see micro-streaks and micro-pores. The wood should be treated with food grade mineral oil once a month, $2 a bottle at the pharmacy. The plastic handle on the classic ikon black and creme I presume is very high quality and durable, and should be more hygienic and require less care than the blackwood handle.

3. This knife cuts totally different from dull knives. With a dull knife, you make a lot of forceful movements, and know you don't have to be that careful because for most cuts to get anywhere you have to apply heavy pressure and a heavy slicing motion. This dullness may give you the habit of thinking a blade can't cut without force so you aren't that mindful of your food or non-knife hand. With a sharp knife, positioning the blade for a cut must be done delicately with a lot of awareness of where your food and non-knife hand are, or you risk messing up the food or really injuring your hand. For most things to be cut, all it takes is a slicing motion, often with you actually pulling away from even the weight of the knife to minimize slicing into the cutting board. It's truly that sharp, and if you don't want such a sharp object in your house, do not get this knife.

This knife is made of quality steel. However, the design of this knife is off balance. The pressure point of this knife makes me move my hand too close to the blade in order to cut through hard food items. Over all, I have had better knives for less the price of this one.

Wusthof Gourmet 2-Piece Carving SetNot too happy with this purchase. Knive is too thin and therefore flexes too much when used for carving. I do not recommend it.

Simply put, for 30 dollars more you can get something that will actually make carving enjoyable. I received this as a gift, am happy to have something to carve with, but am already in the market for another carving set. It's too light weight, flexible. The knife does keep its edge nicely.

This sharpener looks like a refurbished item in that the paint is a bit mottled but the sharpener performs very well with high quality knives. The high quality knives that I tried sharpened quickly while the lower quality knives took longer to achieve similar results. The sharpener does leave a legacy on blades that may disturb some owners of high-end knives. In order to remove all burrs the manual extra fine hone seems to do a respectable job. Final analysis: store it in the cabinet, it's not good looking.
