Sous Traveling Culinarist 2nd EditionWe have 2 of these bags at work, and I love them!!! I take them to off-site catering events, and all of our chefs and servers know exactly what is in the "TC Kit" as well call it. I also send them with our chefs for smaller private chef events. Took it on the plane to Germany last year when we cooked at the Rheingau Food and Wein Festival. It held up fabulously through the flight and customs. It even got lost on the way back to the US, and when i did get it back, everything was in place, nothing missing, all compartments closed. I've checked other chef cases before on airplanes (i was a private chef and did tons of traveling). NOTHING has held up the same as this bag, and that I can easily take it from private chef dinners to 200 person events AND the airplane and have it work for what I need....totally worth every penny.

I have owned a lot of bags in the past and this is the best bag I have owned so far. This bag is extremely sturdy and rugged. The wheels glide smooth and quiet over all surfaces including rough pavement. I love the functionality of the bag. It has pockets everywhere for everything. I could not recommend this bag more. You will not be disappointed.

Furi Tech Edge Restorer Replacement

Furi Tech Edge Restorer ReplacementI saw it but did not believe the product actually worked. I was pleasantly surprised. I now have two of the Furi Tech products including the restorer.

Believe me they both work and work well. I am using old knives that I long ago thought could not be sharpened...they cut now like a razor. I would recommend purchasing the restorer for those knives that have long ago lost the angled edge and the diamond 'fingers' for keeping the edge on a regular basis. Wish I could find the replacement for the fine edge fingers.

Misono UX10 Gyutou

Misono UX10 GyutouI've been a prep cook for 7 yrs. and have used different knives and this knife is great. Lightweight, sharp, flexible. Easy to use. I would recommend it to anyone. Expensive, but any quality knife is, if your willing to spend the money it is worth it for sure.

I bought my Misono directly from Korin Knives in NYC in 2008 (when I was working as a chef in the city), and it has been my favorite knife ever since! I have tried Global, Wusthof, JA Henckels, Shun, and others, and none of them are as sharp as Misono. The others are good, and definitely have their uses, but will never be as sharp.

Pros:

Has a nice feel in the hand

Designed especially for lefties as well! The default is for righties.

Cons:

This knife is meant for vegetable/fruit preparation ONLY! It will chip if used to butcher chicken/fish with hard bones. Trust me, one of the guys in the restaurant I worked at used my knife one day to butcher a chicken, and when I got back from the prep kitchen, there were several nicks in the blade. It took me a while to sharpen them out (plus, that wastes the metal in the blade).

You really need to know how to properly care for this knife. It requires learning how to sharpen by hand with a Japanese whetstone.

Overall, this is an amazing knife, and well-worth the money. You just need to be committed to sharpening it properly and be sure not to use it for anything but fruit, veggies, nuts, sushi, etc... (nothing bone-hard).

Messermeister Mu Fusion 8-Inch Chef's KnifeI bought one of these on clearance but based on my initial reaction to having it in my hands and using it to prep food I'd be inclined to pay the full MSRP. I have used a number of chef's knives and santokus over the years but I have never felt another knife to be so perfectly balanced in my hands. The handle is symmetrical and oval in section, great for a lefty like me unlike some Japanese knives, the handle is not overly large yet sill generously sized for my smallish hands and though it is rather smooth it is never slick feeling, even when wet, and the taper gives it a feeling of security with a variety of grips. The centre of balance is right at the pinch point just ahead of the bolster making a wide range of knife techniques feel natural and easy. Out of the box the thin blade is super sharp and though time will tell how well this knife holds an edge and how easy it will be to resharpen, so far so good, I've yet to notice any degradation in cutting performance, it still effortlessly cuts through cabbage or tough carrots which it easily turns into a fine julienne. The blade itself is beautifully tapered from just under 3mm on the spine just ahead of the bolster to a very acute edge and tip so it produces very little wedging whilst still being rigid and substantial. And it is simply gorgeous to look at and to hold and to use. Recommended.

I use this knife in an extremely busy professional kitchen. Let me start by saying the weight, balance, and feel of the knife are all spectacular. It feels as if you can do anything with this knife. I frequently use it to butcher, cut and trim fish/meat and I never have any issues. It makes cutting vegetables fun. In the 6 months I have owned it, I have run it over a wet stone 3 times and used a steel daily to maintain an unbelievably sharp edge. This knife will cut paper effortlessly and I wouldn't doubt if you could shave with it...yes it can be that sharp if maintained correctly! I absolutely recommend it, and all the other chefs i work with ask me to use it when they have a task their knives just wont handle.

The Kuhn Rikon Nonstick Paring Knife is a very good value for a quality knife. We own several of these knives in different colors for use at home and in our shop. The different colors allow us keep the ones we use to cut materials in our workshop from accidently being used for food products.

The blade is *VERY* sharp and holds it's edge very nicely. The nonstick coating on the blade is a real plus as it helps to keep the knife clean as well as to keep it moving through thicker items. The snug fitting platic sheath is a welcome addition to safely store or transport the knife.

My only complaint is the light feel of the plastic handle. It isn't flimsy exactly, just lacks heft. This might just be a personal prefference issue and it hasn't stopped me from buying more of them.

Overall this is a very good paring knife at a reasonable price. Recommended!

First found these knives at a specialty store and I bought one even at the painfully high price. So happy to find them here on Amazon. Got a whole set. They all have a very sturdy sheath to protect the killer blade. With the nicely formed handle, keen edge and the coating on the blade you'll be delighted with how great they are to work with. Several beautiful colors that really "pop" Highly recommended as a gift too.

This little sucker is sturdy, but it's designed to be used, unlike so many other kitchen devices that seem to be designed to be looked at.

The removable bottom is fantastic for keeping stuff nice and secure. The included hand protector is a God-send to someone like my wife, who has a bad habit of scraping her knuckles on graters.

With a twice-a-year honing, this knife remains incredibly sharp, is well balanced in your hand, and slices with ease even the toughest meats. With careful handling, the blade and handle have not worn at all, and will probably outlive me. One caveat for those who do not have high-carbon steel knives: they do require more care (ex. don't put in dishwasher, don't let blade touch other metal, don't use crude electric sharpener). Don't let the babysitter try to pry-off bottle caps (sadly, the matching 3" paring knife met its end this way). If you appreciate fine quality in this age of throw-away, this is a knife one could be happy with forever.

I bought this one today, my first high-end cutlery purchase. It's so worth the price. I spent a lot of time in the store handling the different brands of knives, getting a feel for their construction and how they sit in the hand, and this one was definitely the best. The blade is a thing of beauty, and the handle is incredibly comfortable, not likely to hurt your hand a bit after long periods of continuous cutting. When I got it home, it performed just as beautifully as I expected. I'll definitely be saving up for more Henckels Four-Star knives.

This has been my favorite knife for years -I had it so long I can't recall when I got it. I already had an excellent set of Sabatier knives, but the handles were a bit thin and had somewhat sharp corners. One day I had occasion to use a Hencklels Four-star, and instantly fell in love with the voluptuous handle. It felt soooo good in my hand. Note that I have largeish hands, if you have smaller hands this might not be the knife for you.

I already had a 10" chef's knife, so I chose this 6" "sandwich" knife (that's what they called it back then). It has been my workhorse for years. I can put an edge on it that will shave hairs off my arm (but not quite off my face :-). Alas yesterday the blade snapped while cutting a sweet potato. No bending or twisting, just pressing down pretty hard, and bing! Mind you it had received daily use for well over a decade, if not two.

Now that I have to replace it, I think I'll go with an 8" blade. This 6" size was just a tad small for general purpose use, and I have plenty of other smaller knifes. I may get the 8" equivalent of exactly this knife, but am also considering the W'sthof Grand Prix II 7-Inch Fine Edge Santoku Knife. I'm hoping that design will keep my knuckles from bumping into the cutting board.

Here's a free tip: when pushing food around on the cutting board, use the BACK side of the knife. Don't drag the sharp edge across the board.

I just wanted to write this review to let everyone know that this knife is very good and worth the money you'll spend, however in my opinion Henckel knives have one flaw. I can't stand the little metal piece at the bottom of the blade. It's a sort of finger guard they built into the design. I cooked for a living for three years and had the opportunity to use everything from a 25.00 plastic grip knife we used to bust up lobsters all the way to hand forged Japanese $500 knives. If you are super picky about your knives that little piece of metal will drive you nuts because it hinders the sharpening of the last inch or so of the blade. Overall I would get a Global knife if your looking for something in the same price range. It is a lighter knife but excellent quality. If your looking for something with enough heft to chop a Volkswagen bug in half the Henckel still might be for you.

An ok knife. This knife is not exactly sharp at delivery, failed the tomato test. Was able to put an edge on it with a couple passes thru a "V" kitchen sharpener.

These knives were better than I had expected. I was familiar with the product, but they were a lot sharper than I remembered. I paid a great price and would absolutely do it again.

Zhen Japanese Damascus 6.5" Light Cleaver Chopping Knife set

Zhen Japanese Damascus 6.5' Light Cleaver Chopping Knife setWe have been using cheap cleavers for awhile and now want to upgrade to a higher end one. After some research, we picked this one since it's priced similar to high-end German knives but with better Damascus steel imported from Japan. Plus, we like to support our folks since we are Chinese and this is made in Taiwan. This is also my first Amazon review.

I don't have a Shun cleaver but do have two paring knives made by Shun. Putting this cleaver on the side of the Shun, you can see the devil is in the details.

You can immediately notice: the Shun knives have flawless finishes throughout, the surface has higher gloss with even dragon pattern. The Zhen has less shine, the alternating pattern is also nice but appears not as evenly distributed.

The craftsmanship: as another reviewer of the Zhen 8" cleaver pointed out, the attachment of the handle to the rear of the bolster is not as smooth. There is even maybe a tiny gap on the bottom side. There are multiple noticeable scratches on the blade, especially on the surface between the blade and bolster transition tiny scratch pattern makes you feel this part was not well polished. There is a rather deep scratch about 5 mm long on the edge of the end cap of the handle. Also, I noted the burrs a few strokes on a steel easily took care of it; however, I should not have to do this with a new knife, especially one with a price tag considered expensive for most people.

One thing I don't understand, this one claims to have 67 layers, but Shun claims only 16 layers on each side. I counted the coarse lines on the blade: both have 15 lines. So I assume they have same number of layers.

Again, none of the above affects the usability of the knife. It's light, thin and razor sharp, perfect for Asians with smaller hands. With the material used, I expect it to perform much better than the cheaper cleavers we have been using. However, at this price, the company really should pay more attention to the details to be able to put this side by side with the higher-end German and Japanese made knives (think about someone wants to give this as a wedding gift, appearance will be as important as function). The minors flaws mentioned above are easily avoidable but definitely hurt the presentation of the product, I don't even see these problems in my cheap JCPenny Cooks cleaver made in China. Hence the subtraction of one star.

Not much to say about the carving knife. It also has burrs on the edge needed a couple of strokes on a sharpening steel. For $10 extra, I picked this set instead of the cleaver alone to get a small, sharp knife made of VG-10 core: seems to be good deal.

There is no "brown leather inlay" so buyer beware. You can see some wood grain showing through the coating on the top and the coating almost seems like plastic. With that said, there is a slight bow to the front which is attractive and the drawer pulls are burnished which look nice also. The lid knob was a little loose but I was able to get a small screwdriver up in there to tighten it. The inside is roomy although my new knives are so big they were difficult to fit in the slots on the inside of the lid. Overall it's okay so I'm keeping it, but it seems a pretty expensive price for the defects on the top of the lid.

I purchased this item after carefully viewing it on site but when the item arrived it was different to the advertised product.

Amazon then sent a replacement product to me, unfortunately the second one was also different (like the first one) no leather inlay on the top, so returned both items back to Amazon.

I have to give credit to Amazon as they were extremely helpful to me with sending both items back with return mail addresses, also the refunding in full, the cost of each chest & the mailing/postal charges. As I live in Perth, Western Australia the postage for these heavy items was very expensive & Amazon have also refunded the postage that I paid.

I was very impressed with the communications with the staff & would encourage anyone to contact a staff member when a problem arrises no matter how small & regardless of the time difference.

I purchased this flatware chest elsewhere; but since I shop a lot with Amazon, I thought I would let Amazon customers know my opinion of this product.

Quality: it really is a beautiful chest, finely crafted of nice polished wood and decent shiny brass hardware. I saw no leather inlay as stated, but the inside was nicely lined with a soft dark brown felt fabric. I was very pleased with the quality of the chest.

Configuration: I wanted a flatware chest specifically to protect my 8-setting Nikko Happy Holidays stainless flatware, because it's such a pain to wrap and rewrap with tissue and baggies every Christmas season. Upon loading the pieces in the chest, however; I found that the overlarge round ceramic handles of this specialty flatware prevent more than two pieces to be stacked in each slot. Therefore, 4 soup spoons, 4 teaspoons, 4 dinner forks, 4 dessert forks, 2 spreaders, and all 8 knives in the lid are what fit in the main compartment. Other than the knives, a second service for 4 would not fit. A big plus: 8 hostess serving pieces (2 large and 2 medium serving spoons, meat fork, small ladle, sugar spoon and cheese server) fit well in the nice-sized drawer; which was thankfully NOT separated into slots.

Overall: I realize the handles on my flatware are large, but there should be more depth to a product advertising that it holds 180 pieces, which is why I only rated the product 4 stars. To be fair, perhaps none of available brands of flatware chests have the depth that this set would require. I do really like this chest, but I will have to purchase a second one to protect the remainder of my holiday flatware. Which is somewhat acceptable, because I have a few more serving pieces on my wish list!

Faberware Annatto Satin 45-Piece Flatware Set, Service for 8I thought, because of the low price, this flatware set would not be of very good quality, but fine for everyday use. I was pleasantly surprised that this set not only exceeded my expectations, but the care and upkeep is fabulous. Does not water-stain at all in the dishwasher,(we have extremely hard water) and the set is also quite heavy. It doesn't bend and is quite sturdy. I highly recommend this set and would buy it again.

There is not much that needs to be said about this set. They look good, are comfortable in the hand and are very durable. Unlike some cheaper sets, there are no machining errors on these such as unfinished sharp edges on spoons or nicks and pitting. I bought these to replace my old set of Faberware, which had lasted years. However, they had met the sink disposable many times and needed replacing mainly from issues like that, not from a manufacturer defect. I would have no problem recommending these to someone.

You get what you pay for. This set gives you a service for 8 at a cheaper price than a lot of services for 4. I fell for the bargain and while it "serves" the purpose ... it's definitely as cheap in quality as the price would indicate. The bands at the head of the stem are not particularly well defined; the difference between the "brushed" handles and the regular shiny tines, bowls, knife edges above the bands isn't very distinct. The pieces don't have a lot of heft to them but I wouldn't say they were flimsy either. They seem to be fine going through the dishwasher (even with hard water). Simply put ... this flatware does the job but they don't really impress.

OOPS. What happened? The original set came in a blue package, the two this time came in green and although the blade was the same, I don't like the new handle feel too much. I have bought several of these and this time I'm slightly disappointed in the feel and grip of the handle. When something simply works, don't change it.

This knife is very "hand friendly" balanced well and has a good cutting edge. Holds its edge about as well as any I've had. Found it very useful. Amazon has it priced quite inexpensively.

Admittedly my original, well-used and loved Chicago Cutlery knife set is over 25 years old, so perhaps some of the smoothness comes over time. However, in this one both the wood and the metal feel rougher and of lower quality than the old one. The handle is also about 1/4 inch shorter; the combination of shorter handle and slightly longer blade makes it a little less comfortable in handling. All in all, it is a very acceptable knife; it just loses in the comparison contest with its original.

I was looking for more flexibility in the knife. I thought it should give more than it did. I would not recommend it if you have another choice. The price is good, but not if you have to purchase another one to do the job you thought this one would do. Save your pennies and get the knife that's right for you...and the job you have to do with the knife.

The tang is slightly larger than the handle and can be felt sticking out a little on both sides of the handle. The copper rivets also are slightly above the handle, and can be felt. Poor attention to detail when finishing or maybe they have skipped that finishing step.

Otherwise good balance, cuts well, both as expected from Chicago Cutlery.

The old one lasted several years at least, and I use it a lot. I drilled a hole in one corner so I could hang it over my sink on a screw so I can wash it and just hang it up to drip dry. If you take a wash cloth and dampen it, then place it on the counter under the cutting board; you'll have a nice non-slip surface and you won't have to chase the cutting board all over as you use it. I hate tiny, cheap cutting boards! This is a keeper! This makes an excellent gift.

Kuhn Rikon Kinderkitchen Dog Knife with TeethI got this knife along with the Kuhn Rikon Kinderkitchen measuring spoons for my daughter for Christmas. She loves using it to help chop vegetables for dinner. I was so pleased when she ate some raw cabbage after chopping it up. She spreads butter with it as well. I am teaching her proper knife use techniques even though she is only 3. As other reviewers have said, the knife is sharp enough to cut food, but it would be difficult to really injure yourself with it. Great, fun product that playfully includes children in food prep.

I bought this knife for my daughter after she came home from preschool day after day talking about how she helped to cut up vegetables with a puppy knife. I asked the teacher what she was using to cut with. She showed me and we had to have one! My daughter LOVES cutting up vegetables for soup or to dip, and this knife is the only thing I would let her use. It works and is safe for a careful 4-year-old (with supervision). I bought this knife for a 7 year old girl and 9 year old boy. Its wonderful, it fits in a little hand and although it cuts very well its not sharp to the touch...i have no idea why but don't care since its the safest way for the little ones to help in the kitchen. great product.

Gave this to our nephews for Christmas (they are 3, 4, and 6 years old), and the six-year-old told us the next day that he had already used it "all the time." :) Funny, since it had only been one day. When we see him again in a couple of weeks, we'll ask him if he still likes it. The knives are super-cute and perfectly kid-sized, and I'm not aware of any problems... I'll check in with their parents on that. They are Swiss-designed, and having spent a month in Germany last year, I tend to have confidence in designs that come from that part of the world. :) So four stars for now, until I check in with the family again.

March 2012 Update: Five stars now, since I asked the six-year-old in February how he liked his "little dog knife," and if he uses it. He says he still loves and uses it all the time. I asked how his four-year-old brother's knife is holding up, and he said "good, but he pulled the tail off." So they still love their knives, and they've held up well, though the rubbery tail can apparently be pulled off. That's too bad because they're so cute with their flexible little tails.

This knife is slightly larger than the dog knife without teeth. Both are great products, easy for the kids to hold, fits nicely in their hands, great story to teach then the proper way of cutting keep the dogs nose to the board, watch his eye as it goes up and down, no fingers in front of the ears, and hand status in front of the tail (look at the knife and this will make sense)

They are good quality and last a long time between sharpening.

As with any knife a good "steel" will keep the edge keen.

These are not knives for "wannabee" chefs who watch cooking shows on TV they are for people who "use" knives on a daily basis.

They are good quality Swedish steel equivalent in my opinion to other brands costing 5 or more times as much.

The molded-in handles WILL last a lifetime I have Swibos that are 25 years old which get used for offshore fishing (a lot) which are still in perfect condition except of course the blades slightly smaller than new because of the sharpening process (as with any knife that is used a lot).

The steel will NOT rust even in constant contact with and storage in a saltwater environment.

If you have smaller hands then the 8 inch version may be a better bet for kitchen use.
