Color Coated Santoku Knife

Color Coated Santoku KnifeI got this as a gift for my husband and he really likes it! The knife is really sharp and cuts through fruits and vegetables very easily. It's not really an issue but the knife is fairly small and probably works better for smaller hands. Would recommend this knife.

The knife is sharp and cute but it is very small. The handle is even small and doesn't fit me very well.

Miyabi Morimoto Edition 10-Inch ChefI use it all the time. Chopping, and dicing vegetables mostly but it's an overall chef's knife. Good quality. I wouldn't take it to a restaurant as a professional tool for fear of someone walking away with it if you left it unattended. The workmanship is pretty to look at. Keep it sharp and don't ever put it in the dishwasher. Manual cleaning only, and drying off.

I like this knife and i got it in couple days from the date i purchased.

Shun Ken Onion 7-Piece Knife Set with Bamboo BlockI've used a great many knife sets over the years from Knives made in England and the USA to the more expensive knife sets manufactured in the Asian locales. These knives are just about the sharpest, delicately balanced and rigidly manufactured knives I've ever used. The Honing rod is to remove any nicks or slight blemishes on the blade edge but NOT for sharpening. These blades really do keep their edge. In fact, you want to make sure you don't get anything you want to keep on your body in the way of these blades while using them. I've found that a sharp knife IS actually safer to use than a dull blade when preparing any type of a meal. These knives meet the challenge and then some. They are also a very comfortable knife to handle which makes cutting food products quite pleasurable. I would recommend these knives to anybody wanting to step up to a better set of cutlery blades. Barr none.....they are GREAT and very handsome too! They ARE a bit more expensive than the knives you get at K-Mart or Wal-Mart but the product justifies the Price, and then some.

These are by far some of the best knives I have ever owned. I started with a similar set and have now purchased several other Shun Ken Onion knives to accompany it. The sharpening policy was changed recently in 2011 where knives were temporarily sent to a third party site. However as of September 2012 Shun has reinstated the free sharpening policy; you only pay a nominal shipping fee of $5 for the first knife and $2 for each additional knife. I would certainly look at adding a Santoku knife to this set which I have often seen come on sale. If I didn't already have this I would be buying one, one of the best kitchen purchases I have ever made. The serrated utility knife is perfect for cutting fleshy vegetables like tomatoes, the chef knife is my go to knife for general cutting, the bread knife cuts through hard crusts like its butter. Having owned some nice Wusthof and several other lower end Calphalon and other sets I can wholeheartedly recommend these for purchase.

We have had our Shun knives for over a year and they have worked great. We sent them to be sharpened and Shun has now outsourced their sharpening to a 3rd party so it cost $70+ to get the knives sharpened. We also had a knife that needed repair work from Shun. It was returned to us severely scratched and we had to pay $20+ in shipping. When I called customer service management at Shun they just said sorry they cannot do anything. This is my first professional quality knife but I tried out many before purchasing. Sure the knife is long but it's not like the dimensions are hidden on the page. The edge is wonderfully sharp and combines with the weight to yield an absolute slicing machine. The balance is perfect and, if held correctly (google image search "how to hold a chef's knife"), the handle fits my medium sized hand comfortably. Shun DM0706L Classic Left-Handed 8-Inch Stainless-Steel Chef's KnifeI have used every form of cutlery from Department Store cheapies on up to hand-made custom knives costing many hundreds of dollars. If I could select merely one knife from them all this would be it. The edge, the balance, the beauty, the pure sharpness of this knife, has to be experienced to be believed. I have used mine 7 days a week for a year and have not once touched the blade to any steel or honing implement. I use it at home, in the restaurant and on catering gigs. The special 16-degree angle edge is magnificently durable.

When you wish your Shun knife sharpened, box it up send it to the factory in Oregon. All you have to pay for is the shipping to get it to them. They will sharpen it for you and return it to you, free of charge. NEVER take your Shun to the little cutlery store in the mall, as they will ruin it. Do not attempt to sharpen these knives yourself UNLESS you know exactly what you are doing.

This knife feels comfortable to use; it slices elegantly and smoothly through thick or thin meat and produce. I can slice very thin or thick even slices.

I have large hands and the handle fits perfect. This knife also looks great. I considered a MAC Chef Knife; but the Shun left-handed handle feels perfect. I think the handle is small enough for people with smaller hands too. I did also consider a high quality tier Wusthof or Henckel; but I did not like their handles or feel.

The Shun feels ideal in terms of weight and balance and all forms of cutting and slicing. I do having a paring knife; but it is not a Shun. I am considering getting a Shun Paring Knife as my Henckel (middle quality tier) is no where near as sharp and it's handle is a little short compared with the Shun. The blade and over all look of the Shun Classic Chef knife is beautiful. It is my favorite and best knife I have owned.

I use a bamboo cutting board with this knife. I rinse them off and wipe them dry after each use; both the Knife and cutting board. They are easy to wash and dry. The knife is a joy to use and makes food preparation fun. I keep my Shun Chef Knife in a wooden block. This knife is worth it's cost.

my girlfriend got my this knife for my birthday this year, I love it!! I can't believe I managed without it. I am a chef/line cook at a fast paced restaurant, We do over 200 people a night and this knife makes it possible and fun. when it comes to working in a kitchen time isn't always on you side. Kyocera Steel Knife Sharpener, Red

Kyocera Steel Knife Sharpener, RedI've been using the AccuSharp Knife Sharpener With Replacement Blades for about a year or maybe a little more. I'd been happy with it but recently have been having more and more trouble getting a good edge with it.

Turns out that little sharpener requires a fair amount of dexterity to use properly, which I didn't realize until I started to lose strength and dexterity in my hands. It did an OK job while I was able to use it properly, but that time has passed, so I went looking for a new knife sharpener.

This is what I settled on and I only wish I had had the opportunity to try it sooner. The Kyocera is MUCH easier to use and gives much better results than the AccuSharp ever did. Not that the AccuSharp is necessarily bad, but this is just a LOT better. The AccuSharp is more versatile I can easily use it to sharpen pocket knives, tools that are beveled on both sides, and even our pizza cutter but there is no question that the Kyocera is a lot easier to use and gives a much better, sharper edge on our kitchen knives with less time and effort.

I could not believe how quickly and easily this little sharpener brought my knives back to sharpness. Just a few swipes back and forth and everybody's happy.

The knife geeks will tell you the ONLY way to sharpen a knife "properly" is to get a couple hundred dollars worth of expensive whetstones, clamps, and guides and then spend hours sharpening your kitchen knives or you will "ruin" the blades. Well, I can't speak to somebody's $1000 Japanese blade made by some company I've never heard of, but for my plebian everyday kitchen knives, the Kyocera does an excellent job.

Seriously, the food doesn't care if it gets cut with a $500 Wusthoff that was sharpened with a precision diamond whetstone at an exact 18.5 degree angle, wiped clean with a lambskin hankie, then blessed by 9 priests and sprinkled with holy water before being wrapped in lambswool and put away in a Lebanon Cedar box, or the Chef's knife that came with your block set, which you cleaned off with the same scrubby you use for all your dishes before drying it on a paper towel and sticking it back in it's block.

My knives are tools, not fetishes, and this Kyocera knife sharpener is a good, affordable, effective tool that will keep my knives sharp so they can keep doing their jobs. It's affordable, sure, but it's also easy to use AND it's effective; can't ask for more than that.

I purchased this mainly because of Kyocera's good reputation for producing innovative products with ceramics. Their ceramic knives are an outstanding innovation, even if somewhat expensive. They also make well manufactured grinders, including a manual coffee grinder that is superb and only available in Japan and from one vendor in the United States. Google Kyocera coffee grinder if you're interested in that.

This product is also ceramic based, with an inclined pair of dual ceramic wheels doing the sharpening. It's similar to other sharpeners of the same general design, but using ceramic sharpeners rather than steel. I received it today and this evening I took all the kitchen knives and my pocket knife to a table and worked on them with this sharpener, and for some knives I was having difficulty with, a Chicago Cutlery set of crock sticks.

The key to sharpening is precision. You want to have an accurate flat bevel on both sides, intersecting at a 25 35 degree angle (depends on what kind of use the blade will get, rougher uses need bigger angles). The more perfect the bevel at the edge (and I mean high powered microscope level), the 'sharper' the knife is. The whole thing depends on the 1/1000 of an inch at the very edge of the blade. Back from the edge, it doesn't matter.

I would say that this sharpener works pretty well on high carbon steel (the kind that rusts), and not quite as well on stainless steel, depending on what kind it is. For some stainless blades, I resorted to the crock stick for most of the work, then the Kyocera sharpener. Very high quality stainless blades may be too tough for this sharpener, cheap stainless won't really hold an edge for long, no matter what you do to it. Reasonably good stainless steel can be sharpened by this thing, but it takes some time. A damaged or very badly worn blade will have to be reprofiled with something more aggressive like a diamond hone or wheel. This sharpener works best on blades that are properly ground but dull at the edge. It also will not work on ceramic blades, which must be sent back to the factory to be sharpened with a diamond wheel, but only every 5 years or so.

I was unable to create a "razor edge" with any of the knives I sharpened. "Razor edge" means able to shave arm hair without trouble or any significant pulling. The edges I did achieve were just this side of razor sharp, but sharp enough for many uses. Given the price, this would not be a bad item to take on a camping trip or put in a kitchen drawer for touch ups -it's certainly better that a sharpening steel. However if you are looking for something to sharpen very dull or damaged blades, or to sharpen at a razor sharp level, I don't think this is your item.

For five or more years, I've had the Chef's Choice Sharpeners 460 Diamond Hone Two Stage Manual Sharpener with Chrome Overlay. It works fine, and I though it was a good hone until I tried the Kyocera.

This one has a single slot and a rotating blade. You can search youtube for a video about how it works, but short story is that it does coarse and fine honing simultaneously. All the knives I ran through this hone were as sharp or sharper than the Chef's Choice could do, and the Kyocera did the job it faster.

If your blade is curved, as most are, then you have to rotate your wrist to sharpen the curved portion in the Chef's Choice. This is unnecessary with the Kyocera, or at least less necessary, because the rotating blade arrangement handles the curve for you. For an extremely curved blade (scimitar?), you might still have to rotate a bit.

I've had the same knives for almost 20 years and they were just awful and absolutely terrible at cutting. In fact, my knives were so bad I almost became averse to cooking because the prep was so horrible and time-consuming without properly sharpened knives. There I'd be, sawing away at a chicken breast or hacking up cilantro with a knife that might as well have been made from cardboard. I've owned three different electric, mechanical knife sharpeners, each one more expensive than the previous. I was incredibly skeptical about trying this inexpensive hand-held knife sharpener, but I enjoyed one of the previous reviews on the Kyocera and decided why not? After the Kyocera arrived, I sharpened all the knives I could within 20 minutes and -surprise, surprise! -they were actually sharp and using them was like cutting soft butter. So easy! So precise! Now the Kyocera is not for ceramic, serrated, or non double-sided steel blades, so I wasn't able to get all my knives sharpened (at this point I'm considering investing in a really good, solid knife set in general) but the Kyocera really did do a very impressive, efficient job on my double-sided blades, including my ancient pocket knife. My $60.00 Chef's Choice 310 (diamond hone electric sharpener) is going to the Goodwill at the end of the month. I like the Kyocera's red color as well, and it's small size which makes for easy storage. I recommend this great little knife sharpener. It's easy to use (it leads the blade of the knife instead of leaving you to figure out the angle the blade needs to be in to be sharpened), easy to wash, easy to store, and quite a nifty little gadget.

The handle is comfortable to hold, the balance of the knife is good and we find ourselves reaching for it for many kitchen cutting tasks.

It great to have a good knife like this cos' it makes preparation so much easier.

I uses it for scoring pork belly skin before I roast it. It so sharp that I use it in every meal that I prepare.

No tomatoes escaped, slipped, moves, I just had 10 perfect halves! Now, that is both sharp and useful!!! I just love this knife so much, I needed to praise it AGAIN. I was joking to my spouse that if one had to be monogamous with knives, this knife would be my one and only... It's truly an "all-in-one" knife in so many ways. I use it to prepare sandwiches in the morning, cut the crust off, and cut the bread into little squares for my toddler. No problem. I use it to slice through stuff. No problem. I use it to chop when it's already in my hand and I don't feel like dirtying my chef's knife for some minimal chopping. No problem. I use the blunt edge to get things spread evenly (e.g. jam on bread). No problem. I use it to cut pie pr pizza. No problem. It's just one lovely, comfortable, knife. I got it on a cyber monday deal ($100), and is was totally worth while. But knowing it now, I'd easily pay $140 for it (the current price). (Not that I mind having paid less, of course... :)

I got my first Shun about 8 months ago (on sale) and this one makes my second. I LOVE it! Super, super sharp like a razor--the way a good knife should be. Perfectly balanced and very sturdy. It is also beautiful to look at! I highly recommend. With care, this knife will last you a lifetime.

Although I wish the handle was a bit more ergonomic this is a good product and I would buy it again. I purchased this as well as the Wustoff product which was more money. I liked the feel of the Wustoff better, however, the Lamson & Sharp was dishwasher safe, and the Wustoff rusted. Do not put the Wustoff in the dishwasher even though they say you can.

All in all, I highly recommend this knife. It's perfectly functional, being sharp right out of the box, and it has a lot of aesthetic charm to it. In comparison to my Shun Premier knifes, this one is more "rustic." The blade is less polished and refined looking (IMO) than those on the Shuns, but it has a rustic beauty that I happen to really like. The handles on the Shuns are treated, finished, and perfectly smooth right out of the box. The wooden handle on this one, in comparison, is completely untreated and wasn't sanded very well out of the box. Outside of color variations in the bolster (which are clearly stated in the description to happen), my knife looks exactly like the images here so the description is spot on.

I'll start with the blade. The steel has a good sturdy feel to it, and the fit and finish are consistent along the whole length. The edge was sharp right out of the box which should always be the case, but hasn't been on every brand that I've bought. The layered steel on the bevel is very attractive and polished, and the hammered upper area is an excellent look.

The shape of the blade is what got my attention and inspired me to buy it, as I'd never used a knife like this before. My Shuns come to a very fine thin tip, and I find myself worried that I'm going to bend the tip (which certainly could be unreasonable, but I am nervous about it) when I'm cutting through something and the tip hits the cutting board with a lot of force. The lack of a sharp tip at the end makes it easier for me to cut with simply because I'm not worried about damaging the tip, and I can fly right through cutting veggies. Shun makes this same type of knife, and I might like it just as well.

Now for some notes on the handle. The wood is completely unfinished, as least as far as I could tell. That surprised me, so I was disappointed. It might be traditional, so I might have had the wrong expectations but I wanted to note it in case you were also thinking that it would be treated in some way. Although the shape was spot on, the surface roughness was sub-par, IMO. Honestly, I would have gotten a "B" at best in eighth-grade shop class if I had left it like that. Due to the outer finish, I felt compelled to lightly sand it down. After sanding, which took very little time, it looked and felt much nicer. Being untreated, though, it just soaked up water when I washed it. I applied mineral oil three times, and it soaked it up quickly each time. The mineral oil improved things, but it still looked too unfinished to me so I ordered some Howard Butcher Block Conditioner because it contains waxes that coat the surface. After using it, the handle is starting to really look and feel nice to me. I wish that it had been treated with something before it arrived, considering the cost of this knife. Since that might be traditional, I didn't deduct a star but I did deduct a star because it required sanding.

I agree with Rubbertoe that the handle feels light compared to my other knives. That said, I find cutting vegetables with this knife to be very easy and...I've got to say...enjoyable. I've learned to grip it higher up on the handle, which puts it into balance for me.

I wanted to make sure that you knew about the handle being unfinished, but I do recommend this knife. The handle can be treated once you get it, and the overall feel and look of the knife is great.

First thing first, this is not an usuba. It's a nakiri. It has a 50/50 double-bevele edge, not a single bevel edge found on an usuba.

I've been using this knife for a few weeks now, chopping, slicing and cutting every vegetable I could get my hands on. It is a traditional vegetable knife, so I'd rather not use it on meat (and I don't even want to consider using it on anything with a bone in it). As such, it has a much thinner blade (than a chef's knife, for example), is super-sharp but would probably get nicks in it quite readily if it were to be used on bones. The hammered Damascus blade is very beautiful and slices through vegetables with the greatest of ease. Also, the saya is a nice addition and fits snuggly on the blade. This knife, however, is not a full tang knife (I've read elsewhere that traditional Japanese knives are not full tang). My only complaint about this knife (albeit a minor one) is the handle. The knife feels a little out of balance because the handle is so light and while magnolia wood is waterproof, the handle is unfinished so after wrapping the knife in a towel for transport, I found little splinters forming from the friction of the towel. All-in-all though, I'd recommend this knife to anyone looking for a nice, affordable Japanese knife.
