The quality feel, construction, fit and finish are in line with the other LamsonSharp forged knives I purchased. However, this particular knife arrived less than razor sharp. It didn't appear used but the edge wasn't very good and had to be touched up with a steel. Perhaps the blade rubbed against the packing box in transit, who knows.

It holds a good edge once you get it sharp enough. It also has a great feel to it in my hand and is a beautiful piece of craftmanship. I just love it!

Chef's Choice Multi-Edge Diamond Hone Knife SharpenerBought one of these recently to replace an older model that had been well-used. (These do need replacing every once in a while, as the diamond grit wears down.) Thought I'd share some tips here.

First, let me point out that the turning wheels in the center are a guide to make you hold the knife upright. The wheels may not be turning throughout your "swipe" if you are using a thin-bladed knife.

Second, you should use a feather-light touch when "swiping." The cutting edge of the knife is very thin, and you do not want to push it down in the groove and damage it. Use a long, sweeping stroke, light and smooth.

Third, to get the best use of this sharpener, every so often you'll have to clean out the metal dust that collects in the grooves. If the bottom of the groove is silvery-shiny when you look down at it, take a small, stiff, clean brush and whisk the groove until the original gray appears again.

I believe that the two slots on this sharpener correspond to the last two (and most gentle) slots on the manufacturer's three slot electric sharpeners. Thus, the first slot sharpens and the second slot hones. The first slot won't be used as often as the second slot.

The edge you get with this gizmo probably won't be as nice as the edge you'd get from an expert hand on the whetstone, but it will keep the family kitchen knives cutting well for many years.

I'm hopeless at knife sharpening, so I was shopping for something idiot-proof. I decided to go with the model 460 because it can sharpen serrated knives. Although the logistics of this didn't make a lot of sense to me, I went with it on the general principle that more features must be better.

Now that I have it in hand, though, I'm fairly certain I will never use the serrated feature. So I'm left worrying--what's the difference with this model? If I'm only going to do straight blades, would I be better off with the 450? Does this model compromise in some way to accommodate both types of blades?

Even for straight blades, it's not as easy to use as I expected. I thought it would be a simple matter of drawing the blade smoothly through the slot a few times. In practice, though, the blade catches and doesn't pull smoothly at all (although it did get better after many passes--you should definitely practice with a cheap knife before working on the good stuff). It's also difficult to keep the blade in the proper position. Or, I THINK it's difficult--according to the instructions, when everything is working right the little wheels will turn as you pull the blade through. At best I get one to turn at once, and even then it's usually stop and start. The instructions are hazy on whether this is a problem.

Actually, the instructions (and the company website) are hazy on a lot of things that seem like pretty reasonable questions. For instance, it says stage 1 and stage 2 sharpen at different angles, but nothing tells you WHAT angle, or says anything substantive the "arch-shaped" edge it creates. I'm left wondering if that's something I really want--it just seems to create a "fat" rather than razor edge, sacrificing maximum sharpness for durability.

It says that very dull knives may take many strokes in stage 1, but doesn't tell you how to know when it's ready for stage 2, other than it will be "sharp enough to cut through the skin of a tomato." I should keep tomatoes on hand for this?

Finally, the curved tip of the blade is extremely difficult to sharpen. At that point the rollers are no longer useful as a guide. The instructions offer no hints on how to deal with this.

It's definitely not the easy solution I was hoping for, and I still have a lot of questions about it. But, if you're not going to put in the time and effort to learn to use a whetstone properly (and I already know how much damage I can do with one of those), I'd say it's the best option.

I'm an avid semi-professional cook/chef and have an extensive collection of knives and sharpeners, including an electric Chef's Choice. I bought this sharpener as a gift and had to try it out first (against my wife's express order). I sharpened one serrated and one regular knife just to see if this would do a good job. Today, I'm ordering another one to send as a belated Christmas gift to my son since I kept the one I tried out. If you need a sharpener, buy this -you will not be disappointed. It's easy (fool-proof!) to use, doesn't take up space, and puts on a razor-like edge in seconds (OK, maybe a minute or two). If your knife has a decent edge already, it hones with just a few strokes. I bought one of these for my mother in law as a Christmas present. Her knives were so dull that you couldn't cut hot butter with them. After a few strokes, what a differece. Her knives sliced thru a ripe tomato with ease. She has trouble using the simplest of tools(she refuses to read or follow directions), but this was so easy, even she could sharpen her knives with ease. I was so impressed that I bought one for my self. I keep an edge on my good knives, but this helped with some of my old knives that were beyond using on a steel. I definitely recommend this product.

Maybe this sharpener isn't as foolproof as I'd like it, and I admit readily to having two left hands, but my knives didn't come out razor-sharp, at all. They come out sharper, that's a fact, but I wanted more. Maybe my knives (a Japanese chef's knife, a Spyderco with half-serrated blade, a Herbertz with a 440 blade) were too dull to begin with.

The tool itself is nicely constructed. Even though it's made of really light plastic it's stable enough, and easy to work with.

But I wonder about the two rollers that supposedly guide your knife. After sharpening, it was pretty obvious that the blade was sharpened unevenly (certainly those of my pocketknives). The rollers, of course, are fixed, and thus don't allow for varying thicknesses. Perhaps I'm doing something wrong (although I'm following instructions to a T), and I'll keep trying, but so far I'm not wildly enthusiastic about this tool.

I usually prefer cutting surfaces such as the special glass ones, or the ultra-smooth plastic ones, because they're easy to clean and don't harbor bacteria. Downside is the glass ones have a clinky noise when you slice hard, and the plastic ones get rifted over time.. and they're both expensive.

The Epicurean is awesome because it doesn't harbor bacteria, doesn't rift the same way the plastic ones do, and they're wholly eco-friendly. They look great in any kitchen and they're lightweight.

The Epicurean cutting boards I have now used for several years are among my favorite kitchen tools. They are thin, but stay flat for years unlike other boards that warp. The surface is kind on my knives but somehow does not get roughed up very much by constant use of very sharp knives. The antibacterial property of a wood based product is another big benefit. This two board set is a good deal on what is a relatively expensive product. Well worth the investment.

Slitzer 8pc Professional German Style Jumbo Steak KnivesI bought these knives as extras for when I have people over for a BBQ. The serrations are very large,the blades are dull and just tear the meat rather than cut it. For the price they work with some extra effort and as basically throwaways they meet the need, but if I was looking for day to day steak knives I would have sent these back.

As other reviewers have noted,these are large German-style steak knifes. The handles and blade are about 2x as wide as a typical steak knifes and about 1/8th longer; the blade thickness is the same as a typical steak knife but the handle is about 1/3 thicker I still find them comfortable to hold even though I have very small hands, but I would think these would be too big for most kids under 12. They have nice, smooth contoured black wooden handles with full tang blades with 3 rivets. The blades are stamped stainless and look and feel like good quality high-carbon stainless steel, which is what it also says on the box they came in. The curved portion of the blade is serrated from 1/2 inch below the point through the curve of the blade and the rest is just a straight edge (except there is about one-third inch of the bottom of the blade with no edge, which is typical on most steak knives I believe this is a safety feature so you don't cut yourself if you grip the handle too high). These were a little dull out of the box, but sharpened easily and seem to hold an edge well. I've had them about a month and so far I like them a lot they are surprisingly comfortable to hold and use, cut decently, wash easily, look great and seem to be wearing well. I've had guests over a few times and used these the size got smiles and laughs every time, followed by exclamations on the nice quality, how comfortable and easy to use they are and where did I get them, lol. So if you want a bigger, more substantial steak knife, these are a good choice. The only caveat is since they are only half-serrated, you need to keep them sharp so they will cut well, which is why I removed one star have to admit I'd like them even better if the blades were serrated along their entire length.

Others have written how good these knives are. Presumably one of three things happened in that case. 1: I did not get the same knives they did, 2: they got good versions of the junk I got, or 3: They were not honest about their comments. I do not know which it would be, but I can state, categorically, that these knives are pure junk. Not sharp, rip meat, loose handles that allow matter to seep under them, and leak water after the knife is dried. Two handles really bad, with cracks round the rivet and rough edges.

If you receive the same knives I did, you will be truly sorry, even if they were inexpensive.

From circuit boards and transmitters in mobile phones to excellent writing pens with sturdy ceramic tips, they've got their brand of excellence in everything. Their entire line of ceramic knives is no different!

Being hardened ceramic, this knife and its brethren cannot be rusted and the blade seems to stay sharper a lot longer because the edge doesn't need to be trued like steel. It's non-reactive to acids and bases and you can easily clean its surface with warm, soapy water. The weight balance and blade control are excellent and the knife seems to dance as it cuts. I am really impressed with the overall quality of the blade itself.

There is only one caveat, but it is a BIG one: the blade WILL chip if you are not careful! Cutting on surfaces other than cutting boards (i.e.-plates or pizza stones) can cause tiny chips in the edge. Improper sharpening (you should get a sharpener specific for a ceramic knife and use it exactly as instructed) and throwing the knife in drawers without a blade cover will also chip the blade edge. Dishwashing is a no-no, since the edge might be damaged, as well. If you get some chips or nicks, the blade will still cut, but the edge will slowly become serrated instead of smooth.

I recommend getting a proper sharpener, bamboo cutting board and blade guard for this or any other ceramic knife so that you can make the knife last for generations!

A good buy, overall, but only if you take care of it.

I've tried traditionally made, good steel blades by Wusthoff and Henckel. I enjoy using those blades, and hate going back to cheap blades. As big a difference is between cheap metal blades to good metal blades, the difference between steel and ceramic is many times greater.

You'll spend the first week just wanting to find items to cut. It cuts effortlessly through everything. I found it best on things that are soft (or mushy) but where you still want precision. You can get detailed control with any type of uncooked meat (chicken breast). Dissecting tomatoes at any stage of ripeness is easy.

A couple notes of caution:

1. Watch your hands. I cut my finger with one of these blades. It was so sharp I didn't feel it at first.

2. Don't let beginners use. For the reason above primarily, but also because they'll try it in unattended ways that damage the blade.

3. Watch for chipping. The blade can be sharpened, but you want to be somewhat cautious. The tradeoff with an extremely hard blade is it becomes a little less malleable/more brittle.

For many people this type of sharpness is unknown, and should be experienced

and enjoyed. Sharpening should be left to Kyocera, as they can do the best possible job, and this knife should only need to be sharpened about every 5-10 years based upon how often you use it. I agree with the chipping liability but this is a small price to pay to have an INCREDIBLE knife in the kitchen, be sure to keep your eyes on what you are slicing!

If you want any quality cutlery, I definitely don't suggest it. The cutting board was dried up and therefore cracked but, again, since I don't cook I don't really use it. There's three or four key knives that I use that make this worth the price. But, if I had done more research, I probably would have spent a couple more dollars on something that provided me a knife block instead of the crappy cutting board.

Its scary sharp outta the box, but it's hard steel will take and hold a steeper edge with ease, you just have to be sure to take care of your knives properly. But i don't honestly see anyone in their right mind spending this much on a knife and mistreating it. Anywho, the knife is a very beautiful, well made tool. You can spend hours just staring at it. The Damascus look is great, and does a very good job at hiding some scratches (in case u get is scratched). The balance is spot on, and the over sized handle is the best i've seen and felt, really. The pakawood is really beautiful. It's a knife with its own personality that (i bet) will last a life time. If it's in ur budget, buy it, its a no brainer. I own wusthof and global knives, the handling and looks of this Mac is head and shoulders above 'em. I still love my globals and wusthofs, don't get me wrong, but this is knife is in another league. And just a little side note, i have contacted Mac USA a few times (email and phone) to get their advice on a few things and each time i've gotten fast and great response. So its good to know that ur product its well backed up. As far as Amazon goes, the transaction was fast and flawless as always, so nothing new to brag about there.

I recently took up cooking and thought people who criticized these knives were kitchen knife snobs. "It's a 15-piece for $25-30! What a great deal!" Or so I thought. After spending 4 hours cooking a massive meal with much of that time cutting up veggies, I decided to try out another knife. So I bought a Pure Komachi 2 Series 8" Chef's Knife, Fuchsia. $11 for one knife seemed a bit steep relative to this deal, but it wasn't too bad. So what did I think? Yikes! Potatoes that used to require some effort cut like butter. I went back to the Cook N Home chef's knife and tried sharpening it. It was still way too dull to compare. Do yourself a favor. Skip the cheap 15-piece and get 2-3 really good Pure Komachi 2 knives for the same price. I wish I did. I also recommend the Vidalia Chop Wizard to further reduce time and effort.

Those knives are not sharp even straight from the box! I bought it because of fairly good reviews and good prices, but now I am thinking about returning it.

It makes this the perfect "travel" knife. I just throw it in the pocket of my cooler and I have a wonderful, sharp, all purpose knife for cookouts and camping.

I use this knife alot to chop veggies. It is very sharp, doesnt rust in the dishwasher, and I love the nonstick blade. Everyone that has used it or seen it thinks it is a cool looking knife because the non stick color coating on the blade. I have several colors and the price cant be beat. I am very happy with these.
